Chicken Drums:- Herbed
8 Drumsticks!.
3-4 Cloves of Garlic!. (crushed)
2T Oregano, Rosemary, Thyme or Parsley!. (fresh, chopped)
Zest of 2 Lemons!.
2t Salt!.
Ground Black Pepper!.
Oil!.
4 Carrots!. (peeled)
4 Parsnips!. (peeled)
Pre heat oven to 180C (350F)
a) Mix together garlic, herbs, lemon zest, 1t salt, 1T of oil!.
b) Remove skin and knuckle from drumsticks (optional) and toss in the mixture to coat evenly!. Place on oven tray lined with baking paper!.
c) Cut carrots and parsnips into ?’s lengthways and toss in the remaining salt oil and herb mixture!. Scatter around drumsticks!.
d) Bake drumsticks, carrots and parsnips for 30 minutes!.

Meatloaf is one of my favorite recipes - served with mashed potatoes and whole green beans or steamed baby carrots!.

Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours!.

Cherry glazed chicken breasts:

1 can cherry pie filling
4 boneless chicken breasts

Heat oven to 350 degrees F!. Place the chicken breasts in a glass baking pan that has been sprayed with a non-stick cooking spray like Pam!. Spoon just enough of the cherry pie filling over the chicken to cover lightly!. Place pan into oven and cook for 1 hour and 15 minutes spreading more of the pie filling over the chicken every 15 minutes!.

This is very easy and you get a nice moist chicken breast!. This also works well for Cornish game hens and pork chops!.

Serve with a rice pilaf, white rice, mashed potatoes or roasted potatoes and a steamed veggie like whole green beans, baby carrots, broccoli or corn!.

Easy Chicken & Dumplings

1 tsp!. oil
2 carrots, scraped and sliced
2 stalks celery, sliced
1 small onion, diced
1 small potato, diced
2 cans chicken broth
2-3 tsp!. chicken boullion to taste
1/2-1 tsp!. salt, to taste
pepper to taste
1 1/4 cup milk
1 1/2 tbl!. flour
1/4 cup frozen corn, thawed
1/4 cup frozen peas, thawed
1 cup leftover cooked chicken breast, diced
1 large can pillsbury refrigerated biscuits, each biscuit cut into 4 pieces
1869 biscuits are the best if not use buttermilk biscuits
In dutch oven heat oil over med-high heat!. Add carrots, celery, onion and potato,cook about 7-10 minutes stirring occasionally!. add broth,bouillion,salt and pepper!. In a small bowl mix milk with flour!. Add to dutch oven!. bring to a boil and add corn, peas, and chicken!. Bring back to a boil!. Add cut up biscuits to boiling liquid!. Reduce heat to simmer!.Cover and do not lift lid, simmer for 10 minutes!. Remove lid and stir!. Simmer for 10 more minutes!.Www@FoodAQ@Com

Whole grilled trout with almonds, served with new potatoes, green beans and julienned carrots!.

Lasagna, served with Green salad and Garlic ciabatta!.

Roast Chicken and all the trimmings!.

Pasta with clam sauce!. Cook angel hair pasta until it's al dente, add some olive oil and a little salt to the boiling water!. Strain when cooked!. Get a can of clams, drain about 3/4 of the juice and add to pasta, mix it up!. Then add the juice of about 2-3 lemons and add 4-5 fresh chopped garlic cloves, mix again!. Then add some parmesan cheese on top and voila it's delicious!Www@FoodAQ@Com

Simple pasta - KEEP IT SIMPLE -
Olive oil
Garlic
Dried Chili Flakes
maybe little diced onion, just a little
salt/pepper to taste ( make sure you grind the pepper )
FRESH basil
Grated lemon zest
Parmesan Regianno (UNDER NO CIRCUMSTANCES USE THE GREEN CAN STUFF)

In skillet with olive oil (be generous with the olive oil), gently warm the garlic, onion, and chili flakes, add lemon zest just before pouring over the HOT cooked pasta!. Use as much fresh basil as you like, personally, I like a LOT of it and I like extra chili flakes!. Squeeze fresh lemon juice over all, toss and add Parmesano!. For dinner party, add sliced cherry tomatoes to the oil and garlic just before you toss on the hot pasta and sometimes I add grilled or broiled shrimp to really make this special!. Serve in a HUGE pasta bowl!. Will get raves every time, guaranteed!. Will never have left overs!.Www@FoodAQ@Com

Pork Chop Loaf

Brown 4 chops--while they cook, fix a box of stuffing mix for pork--Spray 9x5 pan with Pam--stand chops in pan with bone side down--pack stuffing around & between chops--bake 1 hr '@ 350--serve with scalloped potatoes, corn on the cob & tossed salad!.!.!.Www@FoodAQ@Com
