Beer-Marinated BBQ Chicken Tacos Recipe
Guacamole is often loaded with tomatoes, onions, cilantro, and fiery chiles, but a more traditional version in Mexico and parts of Texas is simply mashed avocados with a bit of salt and lime juice!. It’s rich and buttery—a fabulous topping for these juicy chicken tacos!.
Marinade:
1 cup dark Mexican beer, such as Negra Modelo
2 tablespoons dark sesame oil
1 tablespoon finely chopped garlic
1 teaspoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne
6 boneless, skinless chicken thighs, about 4 ounces each
To make the marinade: In a small bowl whisk together the marinade ingredients!. Rinse the chicken thighs under cold water and pat dry with paper towels!. Place them in a large, plastic resealable bag and pour in the marinade!. Press the air out of the bag and seal tightly!. Turn the bag to distribute the marinade, place the bag in a bowl, and refrigerate for 2 to 4 hours, turning the bag occasionally!.
Guacamole:
2 ripe Haas avocados
1 tablespoon fresh lime juice
1/4 teaspoon kosher salt
6 flour or corn tortillas, 6 to 7 inches in diameter
To make the guacamole: Cut the avocados lengthwise around the pits, twist the halves apart, and remove the pits!. Scoop the flesh into a medium bowl!. Add the lime juice and salt!. Using a potato masher or the back of a spoon, mash the ingredients together!. Cover with plastic wrap, placing it directly on the surface to prevent browning, and refrigerate until about 1 hour before serving!.
Remove the chicken thighs from the bag and discard the marinade!. Grill the chicken thighs over Direct Medium heat until the meat is firm and the juices run clear, 8 to 10 minutes, turning once halfway through grilling time!. How sweet it is! This easy recipe uses the grill to reinvent a traditional holiday side dish!. Choose similar-sized potatoes for even cooking!. Note: The sweet potatoes are grilled over Indirect Medium heat and the onion slices over Direct Medium heat!.
4 pounds sweet potatoes, scrubbed
1 large yellow onion, cut into 1/2-inch slices
Extra-virgin olive oil
Kosher salt
Freshly ground black pepper
3/4 cup unsalted butter, softened
Grill the sweet potatoes over Indirect Medium heat until tender when pierced with a fork, about 1 hour, turning three or four times during grilling time!. Remove from the grill and allow to cool slightly!.
When cool enough to handle, cut the potatoes in half lengthways!. Remove and discard the skins!. Place the potatoes in a medium bowl and cover with aluminium foil!.

1 tbs Schwartz American Barbecue Seasoning Simply Shake Seasoning
1 tbs brown sauce
2 tbs tomato sauce
2 tbs orange juice
2 tbs olive oil
8 lamb cutlets
Blend all sauce ingredients together and pour over the cutlets!. Allow to marinate for 1-2 hours in a refrigerator!.
Place under a pre-heated grill or on a barbecue, turning occasionally, basting with any remaining sauce for 10-15 minutes or until cooked!.
Makes 4 servings!.

1 unpeeled cucumber, seeded and grated
2 scallions, finely chopped
1 garlic clove, crushed
1/2 tbsp grated fresh ginger root
2 tbsp finely chopped fresh mint

12/3 cups (375ml) greek-style whole milk yogurt or sour cream
salt, black pepper
1 tsp cumin seeds, toasted

Place sponge cakes on cookie sheet!. Top each with a scoop of ice cream!. Freeze firm!.
Beat egg whites with cream of tartar until frothy!. Gradually beat in sugar, a little at a time, continue beating until stiff and glossy!. Blend in vanilla!.
Cover prepared cake shells with meringue, covering completely the cake and ice cream and sealing edges at bottom!. Return to freezer until time to serve!.
