Well my favorite stuffed fish, is Salmon, Stuffed with, Fresh dill, Fresh ground sea salt, Fresh ground pepper, and Slices of Lemon!. You wrap it in tinfoil and It's best on the BBQ but you can bake it in the oven to!. (I'd say at 350 for 45 -60 minutes, and check for doneness, depending on the size of the fish though)

What you have to remember about fish, is that alot of herbs and spices over power the flavour of the fish!. To properly enjoy fish you have to be able to taste it's true flavors!.

If you want to bake white fish like cod or haddock, personally I think those fish can hold their own, but are fantastic accentuated with Fresh ground salt and pepper, lemon juice and a little bit of garlic and some butter and if you like some thyme!.

White wine goes well with most fish as well!.

Those are some of my personal favorites anyways!.

One that I love, and have done a couple times!. (very successful) was a cheese and celery stuffing!.
Sounds kind of gross, but the tummy loves it!.

? cup cheddar cheese
? cup onion
? cup celery
? cup unsalted butter (salted works as well!.)
3/4 tsp!. salt
? tsp!. black pepper
1? cup breadcrumbs, fresh
2 tsp!. tomato ketchup

chop celery and set aside!.
Saute' onions and celery in margarine until tender!. Toss with salt, pepper, bread crumbs and cheese!. Stir in tomato ketchup!.
Stuff cavity of fish!. Skewer and bake as directed!.

You can also substitute margarine for the butter, if you prefer, it will not change the out come what so ever!. If there are any other vegetables you love, chop those up and put them in as well!. carrots would be good!. You can also switch up the cheese to give it more of a kick!. I'm not sure what kind of fish you are baking, but this stuffing goes very good with snapper fish!.

my husband stuffs his with pico de gallo- tomatoes, onions, cilantro, jalepenos, garlic, and salt w/ a little lime juice!. He loves it- lots of flavor and low in calories!.Www@FoodAQ@Com

coriander leaves a bunch(find in Indian supermarkets)
one whole garlic peeld
half an inch of ginger
little lemon juice
chillie (one)
a pinch of turmeric
and salt to taste
grind all these into fine thick paste!.
then cut the fish both sides, fill this paste in the pockets on both sides and bakeWww@FoodAQ@Com

The best stuff is the simple stuff - lemon (cut up pieces of lemon) and thyme!. It allows the natural flavour of the fish to still come through, but just adds a beautiful, light flavour to it!.Www@FoodAQ@Com

Lemon slices, fresh dill, pinch of salt and pinch of pepper, butter!.

Put fish in parchment paper, folding into a little package, place on cookie sheet and bake away!.Www@FoodAQ@Com
