5 medium sixed potatoes(boiled til tender) and chopped into small chunks
6 hard boiled eggs
1/2 cup pickle relish
1-1 1/2 cups miracle whip
2 tbs mustard
salt and pepper to tatse
1 tbs celery salt
mix well and taste!. add more spices or mustard or miracle whip as you see fit!. you can also add bacon pieces to this and substitute 1/2 cup sour cream for the 1/2 cup miracle whipWww@FoodAQ@Com

I'm going to give you 2 recipes!. Both are super easy!.!.!.and, in both, you can cook the potatoes in the microwave before assembling the salad (use the baked potato setting, cook til it beeps then cover & let stand 10 minutes more!.!.!.then chill, so they are easy to cut & don't fall apart)!. First recipe is a more "classic" potato salad and the second is more of an updated potato salad with a little pizzaz!. I hope you try them both!
Best Potato Salad
7 medium red potatoes-2 lbs (cooked, peeled-if you must, cooled & coarsely shopped)-approx 7 cups
3 hard-cooked eggs, cooled & chopped
? cup finely chopped sweet pickle
2 tablespoons chopped pimiento
? cup mayonnaise
? cup sweet pickle juice
1 teaspoon celery seed
1/8 teaspoon garlic salt
Salt & pepper
In a large bowl, combine potatoes, eggs, sweet pickles & pimiento!. Stir together mayonnaise, pickle juice, celery seed, garlic salt & 1 teaspoon salt, plus 1/8 teaspoon pepper!. Gently fold the mayonnaise mixture into the potato mixture!. Cover & chill thoroughly!. Garnish with additional hard-cooked egg slices, if desired!. Makes about 10 servings!.
Asparagus Parmesan Potato Salad
2 pounds red potatoes
1 bunch asparagus
? medium red bell pepper (seeded & chopped)
2 tablespoons fresh parsley (washed, patted dry, chopped fine & packed into spoon)
3 tablespoons fresh basil (washed, patted dry & chopped)
? cup fresh lemon juice (approx!. 2 lemons worth)
? cup extra virgin olive oil
? teaspoon paprika
1 tablespoon balsamic vinegar
4 ounces shredded Parmesan cheese (or to taste)
Place red potatoes in large pot, add water to cover!. Bring pot to boil & cook until potatoes are tender but not mushy (about 20-30 minutes)!. (Or microwave to cook & then cool & chill!.)
Cut asparagus into 1 inch pieces and steam until crisp tender!.
Cool potatoes completely!. Peel potatoes (if desired) & dice!.
Place cooled potatoes & asparagus in large mixing bowl!. Add the red pepper, parsley & basil!.
Whisk lemon juice, olive oil, paprika & balsamic vinegar in a small bowl!. Pout over potato mixture & toss well!. Season with Parmesan cheese, salt & pepper to taste!.
Make 8+ servings
