Question: Recipes for cookies (any type really)!?
I'd like to start baking from scratch, and thought that cookies are a good thing to start with!. Anybody have good recipes that I could use to get started and get a feel for it!?

Butter Pecan Cookies
Yield: 12 cookies

? cup pecans
? cup (1 stick) unsalted butter
1/3 cup granulated sugar, plus more for coating
1 tsp!. vanilla
1/8 tsp kosher salt
1 cup A/P flour

Preheat oven to 350oF!. Toast pecans until fragrant, about 6 minutes!. With an electric mixer, cream butter and 1/3 cup sugar until light, about 1 minute!. Beat in vanilla, salt, and flour, scarping sides down, beating just until dough comes together!. Too much beating will make a less tender cookie!. Fold in toasted pecans!. Divide dough into 12 pieces, rolling each into a ball and then rolling each ball into sugar!. Place 3” apart on a baking sheet, and flatten w/ the bottom of a glass!. Sprinkle tops with more sugar!. Bake until golden brown, rotating baking sheet half-way through, about 15 min!. Sprinkle w/ a bit more sugar while hot, remove to wire rack to cool!.

Easy Iced Sugar Cookies

For the cookies:
2 sticks unsalted butter, softened
3/4 cup sugar
1 egg
1 tsp!. vanilla or almond extracts (depending on the flavor you want)
2? cups all-purpose flour
? tsp!. salt

For the icing:
3 cups sifted powdered sugar
1 tsp!. vanilla or almond extract
3 to 4 Tbsp!. milk
Food coloring to tint

1!. In a large mixing bowl, combine the powdered sugar, extract and milk, and mix until smooth!. 2!. Add in food coloring one drop at a time until you have desired color!.
3!. Use a small spreader to ice the cookies!.
4!. Allow the cookies to dry completely before piping!.

For the piping:
2 cups sifted powdered sugar
? tsp!. vanilla or almond extract
1? Tbsp!.!. milk
Food coloring

1!. Mix together sugar, extract and milk until smooth!.
2!. Tint with food coloring and place in a self-sealing plastic bag or pastry bag fitted with a 1/8-inch tip!.
3!. Pipe your designs onto iced and allow cookies to dry completely!.
4!. Store in a single layer in an airtight container!.

hot chocolate snow man cookies

12 oz!. unsalted butter (room temperature)
8 oz!. granulated sugar
3 eggs (room temperature)
1 lb!. 5 oz!. all purpose flour
1 1/2 tsp!. baking powder
1 tsp!. salt
1/2 tsp!. vanilla extract

Cream butter and sugar with paddle attachment until light and fluffy; add eggs one at a time, incorporating each into butter and sugar mixture!. Scrape bowl; add all dry ingredients, incorporate well!. Scrape bowl again!. Wrap dough in plastic wrap; refrigerate to set (about 2 hours or overnight)!. Roll out dough and bake in desired shape!.


Pistachio Shortbread & Raspberry Preserve Cookies

1 lb!. unsalted butter cut into 1/4" cubes (cold)
1 C!. granulated sugar
4 C!. all purpose flour
1/2 C!. chopped pistachios (very fine, powder like)
1/4 tsp!. salt
1 C!. raspberry preserves

In a bowl with a paddle attachment, on low speed, work all dry ingredients until the dough comes together!. Place dough on your work surface and bring together into one mass!. Divide dough into 8 pieces!. Line a sheet pan with parchment paper!. Roll each piece of dough about 1/8" thick and place on a sheet pan!. Spread with a very thin layer of raspberry preserves!. Keep stacking with the dough and preserves ending with the dough!. Wrap with plastic wrap and refrigerate until set (about 2 hours or overnight)!.

To bake, preheat oven to 300 degrees!. Line a sheet pan with parchment paper and spray with pan spray!. Cut dough into desired shape and bake until set (about 10-15 minutes)!.

Soft Raisin Cookies

1 cup raisins
1/2 cup water
3/4 cup white sugar
3/4 cup brown sugar
1 cup butter
1 tsp!. vanilla
2 eggs
1 tsp!. baking powder
1/2 tsp!. baking soda
1 tsp!. salt
2 cups flour
1/2 tsp!. nutmeg
1 tsp!. cinnamon
Preparation:
Preheat oven to 375 F!.
In a small saucepan, bring raisins and water to a boil and simmer, uncovered for 5 minutes, then set aside!.
Instructions:
Cream sugar and butter and beat in eggs and vanilla until mixture is fluffy!. Stir in raisins!.
Sift together flour, salt, baking powder, baking soda, cinnamon and nutmeg and stir into creamed mixture!.
Drop heaping tablespoons of dough 2" apart on ungreased cookie sheet!.
Bake at 375 F!. for 12 minutes or until lightly browned!.
Cool on wire racks!. Cookies will become soft when stored in tightly covered container!.Www@FoodAQ@Com

Ranger Cookies
Source: Rice Krispies box
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup margarine, softened
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 egg
1/2 teaspoon vanilla extract
1 cup Rice Krispies
1 cup quick cooking oats, uncooked
1/2 cup shredded coconut
In medium mixing bowl, combine first four ingredients; set aside!.
With electric mixer, beat margarine and sugars until well combined!. Add egg and vanilla extract!. Beat well!. Add flour mixture and mix until well combined!.
Stir in Rice Krispies, oats and coconut!. Drop by level tablespoons onto cookie sheets coated with nonstick spray!. Bake at 350 degrees F for about 12 minutes or until golden!. Cool on wire racks!. Store in airtight container!.

1 box confectioners' sugar (1 pound)
5 tablespoons meringue powder, or 2 large egg whites

ok, my family favourite is yum-yum cookies! It is simply a shortbread with cocoa powder in it!. The icing is simply icing sugar, lemon juice and cocoa powder!.!.!.!. mmmm you make me hungry!Www@FoodAQ@Com
