Good spiced for a moose stew?!
what are some good spices i can add to a moose stew!?

I had the opportunity to eat moose many years ago and was surprised by how beefy it really was!. In fact I would have been hard pressed to tell you which was beef and which was moose!.
Moose Stew
Ingredients
# 2 1/2 lbs moose, cut into 1 inch cubes
# 2 tablespoons shortening
# 1/4 teaspoon cracked black pepper
# 1/2 teaspoon paprika
# 1 bay leaf
# 1 teaspoon salt
# 2 (10 1/2 ounce) cans condensed beef broth
# 1 cup dry red wine
# 1 large onion, diced
# 3 carrot, sliced
# 18 small whole white onion
# 12 small new potato, peeled
# 2 tablespoons butter
# 2 tablespoons flour
Directions
# Saute meat cubes in shortening until brown on all sides!.
Add pepper, paprika, bay leaf, salt, beef broth, red wine, onion, and carrots!.
Cover and simmer until meat is tender, about 2 hours!.
Add whole onions and potatoes; cover and simmer for an additional 15 minutes, or until the vegetables are barely tender!.
Mix butter and flour into a paste!.
Drop into simmering stew!.
Cook, stirring, until stew bubbles and thickens!.

The key to meat especially wild game is to rub the meat before you put it into the stew!.
A simple mix of garlic powder, black pepper and salt works wonders!. Rub the meat and let set for several hours in the fridge!.
Another trick is to sear (brown) the meat on all sides in a bit of olive oil before adding to stew!. Then while pan is still hot, add some (a cup or two) of good red wine and scrape the bits off the bottom!. Bring to simmer and pour wine into stew pot with meat!.

i like rosemary, freshly ground in my mortar & pestle, fresh coarse ground pepper and a couple of bay leaves!. i like to keep it simple and taste the moose not a mish-mash of spices!. don't forget a shot of wine if you have someWww@FoodAQ@Com
