While Hienkles are great knives they do not tend to hold their edge!. Globals are pretty and have and hold a great edge and wusthofs (sorry for the spelling) are also a good knife!. Basically it needs to feel good in your hand!.

Japanese companies have come to be know as the best knife makers!. This is because they mastered the technology over 600 years ago!. I have a lot of Henckels and they are terrific, but I bought a Japanese knife 20 years ago and like it still and recently bought another!. Try this web site:

i love wustof knives and i've been using the same ones for years!. stick either with german or japanese knives for higher quality and don't buy a $100 knife from the food network that was made in china!.Www@FoodAQ@Com
