Cooking food with madeira?!


Question: Cooking food with madeira!?
I am cooking a dish and the recipes states that I need to use madeira but unfortunately the place I am living in now doesn't have it!. The recipe needs the maderia to be added into the blender with egg and mushroom!. What can i subsitute madeira with!?Www@FoodAQ@Com

I am a former chef and like my name sake "David C" has said it is a sweet very heady wine, I have used it many times in my chef career, his sugesstion of Sherry is fine, marsala is to strong or not right, use a sweet sherry or a cream one, not expensive, even add a bit of molasses or dark brown sugar!.

But be careful as it is a fortified wine meaning it is higher in alcohol than normal wine as they add brandy to stop the second fermentation, use it is sparingly, no more than 1/4 cup for a 2-3 cup amount of sauce, it does burn off slightly bit will still be thre, so be careful!.Www@FoodAQ@Com

Madera is a sweet wine with a character all it's own!.
I have used marsalla or sherry in the past, but it has never been quite right!.Www@FoodAQ@Com

If it is only a small amount, I leave it out!.Www@FoodAQ@Com
