Shrimp, Edamame and Artichoke Salad
INGREDIENTS:

* 6 cups baby spinach
* 3/4 pound cooked shrimp
* 3/4 cup frozen edamame (soybeans), thawed
* 1 14-ounce can water-packed artichoke hearts, drained
* 3 vine-ripe tomatoes, cut into wedges
* !.
* For the Citrus Dressing:
* Juice of 1 medium orange
* Juice of 1 large lemon
* 1 tbsp extra-virgin olive oil
* 1 tbsp water
* 1 tbsp minced fresh parsley

PREPARATION:
Wash and dry spinach leaves!. Arrange in 4 bowls or on 4 salad plates!. Arrange shrimp, edamame, artichoke hearts and tomato wedges on top!.

Combine dressing ingredients in a small jar and shake vigorously until blended!.Www@FoodAQ@Com

I love this pasta salad recipe!. It's great hot or cold!. I even included a dressing for it!. Enjoy!

PASTA SALAD

DRESSING:
3 parts Canola Oil
1 part Apple Cider Vinegar
1 tsp!. Dijon Mustard
Balsamic Vinegar (add to taste)
Oregano (add to taste)
Basil (add to taste)

INGREDIENTS:

Summer Squash (sliced thin)
Zucchini (sliced thin)
Red Onion
Tomatoes
Minced Garlic
Broccoli
1 box Bow Tie Pasta
1 Box Tri-colored Pasta
Romano Cheese
Canola Oil
Balsamic Vinegar


Cook veggies along with garlic in canola oil and balsamic vinegar!. Cook until veggies are soft!. Cook pasta separately!. Add veggies to pasta and mix in dressing (I always save plenty of dressing for later - the pasta will absorb a lot of the dressing)!. Top with Romano cheese!.

Here are three salads you can make

tex mex salad-
Start with corn chips (does not matter if Black chips or frettos, it can be flavored if you want) crumbled on the bottom of a large bowl,
then a handfull of lettuce (3 ozs) ,
1/4 cup of tomatoes (can use chunked Salsa),
slice 1/2 of a red onion,
1 large bell pepper (green or red=you can you half of both if you want more color),
one small can of mild chili (I like no beans, but I have tried bean version-its works)!. on the top

Then serve

Shrimp salad-
make a salad you way you like
1/4 cup of large or jumbo shrimp from your supermarket----(Note have the market steam the shrimp for you) on the top
ranch dressing or cocktail sauce for dressing

can use lemon juice on top if you used cocktail sauce

Left-over salad
1/4 cup of Left over rice, heat in microwave or quick fry in a pan
1/4 cup of left over cooked meat (Chicken, steak, cooked shrimp) chopped in small bite size pieces (can serve it cold or heated slightly)
3 ozs of lettuce (a handfull)
1 medium tomato cut in small pieces
1/2 green pepper cut in strips (it can be cooked with rice or meat)
1/2 red onion, cut in strips

Put Lettuce on the bottom of a bowl
then the rice
tomato, pepper and onion
meat on top

can use salsa or ranch dressing as dressing for salad

This is one of my favorites!. You can eaither serve it as a salad, or serve on croissants

1 pound chicken breast meat, cooked, skinned, boned and diced
1/2 cup diced celery
1 cup green grapes, halved
1 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sugar
1/4 cup toasted almonds
1 tablespoon lemon juice
1 cup crushed pineapple, well drained
alfalfa sprouts
whole fresh pineapple for serving, optional

Place chicken in large mixing bowl; add celery and mix!. Add remaining ingredients and mix with rubber spatula!.

To serve in pineapple shell, cut whole pineapple in half lengthwise!. Using a grapefruit knife, cut around the inside of the pineapple, leaving aobut 1/4" from the edge!. Scoop out remaining pineapple!.

Place a bed of sprouts in the shell; scoop salad mixture on top!. Sprinkle with 1 Tbsp!. toasted almonds and serve chilled!.Www@FoodAQ@Com

Black bean & mango chicken salad

16 oz!. black beans, drained
10 oz!. frozen corn
1 C chopped mango
1/2 lb!. grilled chicken
1/2 C chopped red pepper
1/3 C fresh cilantro
1/3 C red onion
1/4 C lime juice
1 C Italian dressing

Toss all ingredients together, refrigerate at least an hour and serve in a large salad bowl with chips or crackers!. You could even put it into pita bread and cut it into wedges!.Www@FoodAQ@Com
