Here is a really simple lunch idea and a link to the site which it comes from, for lots more ideas!.!.!.
Chicken and Tomato Pizza Omelette
You will need:
3 medium sized, free range, organic eggs
The meat from one pre-cooked chicken leg (torn into pieces)
1 medium sized tomato (deseeded and chopped)
1 outside slice of semi-stale bread
1oz (25g) of cheddar cheese (roughly grated)
Pinch of dried sage
Salt/freshly ground black pepper
Sunflower oil
Break the eggs in to a bowl and whisk vigorously!. Put the bread flat in the palm of one hand, outside down, and with your other hand, rub backwards and forwards to crumble the inside in to the bowl with the egg!. Season with salt and pepper and stir well!.
In a small, non-stick frying pan, drizzle a little sunflower oil and bring gently up to a heat!. Add the chicken and tomato and fry off for a couple of minutes before distributing it evenly around the pan and carefully adding the egg mix!. Put your grill on to heat up to maximum!.
When you can see that the omelette is set almost to the top (about 3 to 4 minutes,) transfer the pan to underneath the grill!. After a minute or two, the omelette should be fully set and start to rise slightly, due to the yeast in the bread!. Sprinkle over the dried sage and the grated cheese and return to the grill until the cheese begins to bubble then serve immediately!.Www@FoodAQ@Com

a lot of supermarkets do 'fresh' pre-prepared potatoes in vacum packs - (gratin, sliced potatoes with bacon etc) - relatively cheap, far less hassle than peeling, slicing and par-boiling your own spuds (less waste so more economical) - fry some sausages, bung in a casserole dish with a good handful of frozen veg and a packet of casserole sauce mix and some water - top with your pre-prepared potatoes and bake in oven for an hour or so while you get on with other stuff!. For variety use other meats and / or veg instead of sausages and experiment with different flavour sauces!. It's a one pot complete meal, cheap, quick to prepare, minimum washing up and taste's great! (and can feed a family) - I recommend Aldi and Lidl (if you have them near you) for the basic ingredients -they are very, very cheap and the quality is surprisingly good! (despite what people may think)Www@FoodAQ@Com

Depends what they're fussy about - vegetables is a common one, as is spicy food!.
My boyfriend won't eat tomatoes, which is tricky as I love them! also won't eat food with 'bits' in it, eg!. chunks of onion, won't really eat sauces except ketchup and gravy, doesn't really like anything runny! Though we're working on soup!.
Anyway, some successes:
Bangers and mash with gravy - I make carrots to go alongside, and steamed beans for me!.
Steak - with mash or roast root vegetables
Chicken - can be grilled, stuffed, wrapped in bacon, served with mash or roast root veggies (throw in asparagus, capsicum, zucchini for veggie eaters)
Pasta or stirfry - both chicken and turkey are great just diced and seared in a REALLY HOT pan in olive oil, chilli, garlic and dried herbs (try the classics, parsley sage rosemary and thyme, all great with poultry)!. Cook for the shortest time possible (high heat and quick cooking make for tender poultry), 2 minutes per side, add a splash of the cooking water from the pasta (add a stock cube to it for flavour before cooking the pasta), stir quickly to mix flavours, cook 1 minute longer and mix the drained pasta into it!. This is the only way so far my sauce-hating boyfriend will eat pasta! (OK, he was brought up with bread and potatoes - pasta is pretty out there!)
Tuna pasta - cook up the pasta, drain when cooked and add a cup of low-fat mayonnaise, a big handful of chopped herbs (keep an eye out in public gardens, herbs are surprisingly common), and a tin or 2 of tuna - flavoured if you have it!. Add in microwaved veggies for balance!.
Potato salad - boil potatoes until tender, drain and sit in cold water to cool then drain again, add mayo and a handful of chopped chives and chopped cooked ham (sandwich ham or diced ham, whatever)!. I like to add diced peppers and tomatoes into this too, and tuna would work here as well!.
It's always cheaper to make stuff from scratch IN THEORY but this does require some investment, eg!. if you have tinned tomatoes, dried basil, onions, garlic, onion and salt and pepper onhand you have the base for pasta sauce (napoli if it's plain, bolognese if you add browned mince, add evaporated milk to make a tomato cream sauce, or whatever meat you want, meatballs are also good and cheap), or pizza sauce (and pizza bases are cheap, or you can make your own), or even an added cup of milk or vegetable stock and a couple of cups of frozen mixed veggies will stretch it out to make soup!.
Keep dried basil, oregano and parsley onhand, and chilli powder!. They're all really handy for adding your own touch to sauces, and you can often buy basic pasta sauces (get own-brand) cheaply, and then add your own flavours!. Onions and garlic are also great for the same reason, and last for ages in the cupboard (also great for warding off colds and high in vitamins!.!.!.)
And if you have flour, yeast and baking powder onhand you can always whip up dinner rolls to bulk out a cheap veggie soup meal, or pizza bases, or get adventurous and try making flat bread, putting pizza toppings (eg!. sauce, grated cheese, ham) on top and rolling up before baking to make something like calzone!. Buy the really cheap cheese at the supermarket in big blocks, it's good for grating up and using on pizza or in calzone!.
This is a really handy recipe:
Kelly’s Dinner Rolls
Serves 8
Ingredients
1 1/4 C warm water
3 Tbsp sugar
1 Tbsp yeast
1 Tbsp oil
1 tsp salt
3 C flour
1/2 tsp baking powder
Directions
Dissolve sugar in water, sprinkle in the yeast!. Add oil, stir, and leave to froth!. Add to other ingredients (I sometimes put a few herbs in for flavour) and stir until dough starts forming a ball!. With oiled hands flatten dough (for a pizza) or cut and roll into rolls (I think I used to make about 8, depends how big you want them) Bake at 230 degrees C for 12 - 15 mins!.Www@FoodAQ@Com
