Peanut Sauce for Grilled Beef, Chicken or Shrimp

1 1/2-inch piece gingerroot, peeled and minced
1/2 head garlic, peeled and crushed
2 pounds creamy peanut butter
1/2 cup chicken stock
1/4 cup light soy sauce
2 tablespoons chili oil
lime juice to taste
1/4 cup honey
1/4 cup chopped cilantro leaves
salt and pepper to taste

Combine all ingredients in mixing bowl!. Mix well and season to taste!. Store in a sealed container until ready to use!. Keeps for several weeks in refrigerator!. Use as a marinade for beef, chicken, shrimp or vegetable kabobs!. Makes 2 quarts!.Www@FoodAQ@Com

Look up Asian recipes!. Most egg rolls are made with peanut butter in them and there are many Asian sauces with peanuts in them!. I used to work at a Chinese Restaurant with the owners being Chinese/Americans!.Www@FoodAQ@Com

you can make peanut chicken!. the peanut glaze is really simple!.

Easy creamy peanut butter soup
Saute a chopped onion in some butter!. Add a couple of diced, peeled potatoes and 1 cup of water, bring to a boil, and simmer until the potatoes are cooked!. Put the whole lot in the blender with 1 teaspoon of salt and 1/4 cup smooth peanut butter, adding enough water to give it a soup-like texture!. Pour it back in the pan and reheat, seasoning to taste with salt, white pepper, and red pepper!.

Pork Tenderloins with Asian Peanut Sauce


Ingredients:
? Crisco? Original No-Stick Cooking Spray
? 3 tablespoons Crisco? Pure Vegetable Oil
? Salt and pepper
? 2 (1 lb!.) boneless pork tenderloins
? 1/2 cup chicken broth
? 1/2 cup Jif? Creamy Peanut Butter
? 1/2 cup hoisin sauce
? 2 teaspoons minced fresh ginger
? 2 teaspoons minced garlic
? Chives or green onion tops, sliced, for garnish(optional)


Directions:
1!. HEAT oven to 375° F!. Spray a shallow roasting pan with no-stick cooking spray!.
2!. HEAT oil in large skillet over medium high heat!. Season tenderloins liberally with salt and pepper!. Brown each tenderloin on all sides in skillet!. Transfer meat to prepared roasting pan!. Roast 15 minutes, or until instant-read thermometer reaches 160° F!.
3!. WHISK chicken broth, peanut butter and hoisin sauce together in a small saucepan, over medium heat, until smooth!. Stir in ginger and garlic!. Remove from heat!.
4!. TRANSFER roasted meat from oven to cutting board!. Tent with foil!. Allow meat to rest 10 minutes!. Slice into medallions and serve drizzled with warm Asian Peanut Sauce; garnish with chives!.Www@FoodAQ@Com

I don't know about glazes and such - but here are some cool ideas for peanut butter :-)

Peanut butter and banana sandwich
Serves 1
Preparation time less than 30 mins
Cooking time less than 10 mins

Ingredients
2 slices of white bread
peanut butter, to spread
raspberry jam, to spread
? banana, peeled and sliced
knob of butter

Method
1!. Spread one slice of bread with peanut butter and then with raspberry jam!. Arrange the slices of banana on top and then sandwich with the remaining slice of bread!.
2!. Gently heat the butter in a pan and pan-fry the sandwich for 2-3 minutes on each side!. Serve!.


Peanut and chicken bap
Serves 1
Preparation time less than 30 mins
Cooking time no cooking required

Ingredients
1 large bap, halved and buttered
1 tsp peanut butter
2 lettuce leaves
2 tomato slices
2 cucumber slices
1 cooked chicken breast, skinned and sliced
2 bacon rashers, grilled
black pepper

Method
1!. Spread the bap with the peanut butter!.
2!. Place the lettuce, tomato, cucumber, chicken and bacon on the bottom layer of the bap!.
3!. Season with pepper and top with the other bap half!.


Chewy seedy oat and apricot bars

Makes 18
Preparation time less than 30 mins
Cooking time 10 to 30 mins

Ingredients
300g/11oz porridge oats
100g/4oz pumpkin or sunflower seeds, or a mixture of the two
50g/2oz desiccated coconut
50g/2oz plain flour
200g/7oz butter
200g/7oz golden syrup
150g/5oz soft brown sugar
150g/5oz dried apricots, chopped
125g/4?oz crunchy peanut butter
1 tsp vanilla extract

Method
1!. Preheat the oven to 160C/325F/Gas 3!.
2!. Line an 18cm/7inx28cm/11in Swiss roll tin with non-stick baking parchment, leaving a little of the parchment hanging over the edges for easy removal later!.
3!. Place the oats, seeds, coconut and flour into a large bowl and mix together!.
4!. Place the butter and golden syrup into a saucepan and cook until the two ingredients have melted and combined!.
5!. Add the sugar, chopped apricots, peanut butter and vanilla extract to the saucepan and mix well!. Then pour the mixture into the bowl of dry ingredients and mix together until the ingredients have become evenly combined!.
6!. Pour the mixture into the prepared tin and press down firmly with a wooden spoon!. Transfer the tin to the oven and bake for 20-25 minutes, or until the mixture has become golden-brown and slightly firm!. Remove the mixture from the oven and allow it to cool in the tin!.
7!. Once the mixture has cooled remove it, and, still in the paper, cut it into 18 bars (or cut them to whatever size you want them to be)!.
8!. Store in an air-tight container for up to one week!. These will also freeze well!.
