this is what i do!.!.!. first i don't measure anything because it is all a question in taste and heat to the individual and the people that its being served to!.

get about 4-6 roma tomatoes, 3-4 each of different peppers of your choice, a couple of bunches of cilantro as well as some parsley, 2-3 tomatillioes, 1-2 bunches of green onions,
1 medium white onion, extra virgin olive oil and several gloves of garlic!. I then place these guys in a food processor (after cutting up the larger items) adding more of what i feel it needs (more tomatoes, peppers, onions etc!.)!. the coarseness is determined by you by how long you let the mixture beat in the processor and your blades!. add some oil to the process as you go but not too much its only added to help with the "marrying" of the ingredients!. you can add black pepper and or salt to taste as well as kernel corn if you like!.
it is best to make this ahead of time and let it sit refrigerated
for 24 hours so everything combines but it can be enjoyed right away!.this combination is so fresh and good you will probably never buy salsa again from a jar!.enjoy!!!!Www@FoodAQ@Com

3 tomatoes, chopped
1/2 cup finely diced onion
5 serrano chiles, finely chopped
1/2 cup chopped fresh cilantro
1 teaspoon salt
2 teaspoons lime juice

DIRECTIONS
In a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, salt, and lime juice!. For less chunkiness put in food processor to desired consistency!. Chill for one hour in the refrigerator before serving!.Www@FoodAQ@Com

1 - 14 ounce can diced tomatoes, drained

2 green onions, chopped with the green tops

1 tablespoon fresh green Anaheim chile, chopped

1 teaspoon fresh jalapeno or serrano chile, chopped

1 fresh tomato, diced

1 to 2 tablespoon Tabasco or to taste

1/2 teaspoon salt

Drain the can of dice tomatoes, reserving the tomato juice for later use!.

Chop fresh chiles if you have them, if not canned chiles for both the Anaheim and the Jalapeno maybe substituted

Combine all ingredients in saucepan adding the left over tomato juice if you would like the salsa a little less chunky!.

Bring the mixture to a boil for 1 to 2 minutes!. Reduce the heat to low and simmer for 5 more minutes!.

Cool and refrigerate!.

For a little variety, you can add 1 teaspoon of cumin powder and stir in a little chopped cilantro after cooking!.Www@FoodAQ@Com
