1 pound sweet Italian sausage
3/4 pound ground beef
1/2 cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6!.5 ounce) cans canned tomato sauce
1/2 cup water
2 tablespoons white sugar
1 1/2 teaspoons dried basil leaves
1/2 teaspoon fennel seeds
1 teaspoon Italian seasoning
1 tablespoon salt
1/4 teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
1/2 teaspoon salt
3/4 pound mozzarella cheese, sliced
3/4 cup grated Parmesan cheese

DIRECTIONS
*In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned!. Stir in crushed tomatoes, tomato paste, tomato sauce, and water!. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley!. Simmer, covered, for about 1 1/2 hours, stirring occasionally!.
Bring a large pot of lightly salted water to a boil!. Cook lasagna noodles in boiling water for 8 to 10 minutes!. Drain noodles, and rinse with cold water!. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt!.
*Preheat oven to 375 degrees F (190 degrees C)!.
*To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish!. Arrange 6 noodles lengthwise over meat sauce!. Spread with one half of the ricotta cheese mixture!. Top with a third of mozzarella cheese slices!. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese!. Repeat layers, and top with remaining mozzarella and Parmesan cheese!. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese!.
*Bake in preheated oven for 25 minutes!. Remove foil, and bake an additional 25 minutes!. Cool for 15 minutes before serving!.

FAMILY MEATLOAF

2 lbs ground round
1 cup bread crumbs or crushed saltine crackers
2 eggs
1 cup Parmesan cheese
1 small onion diced
1 clove garlic crushed
1 pkg meatloaf seasoning mix
1/4 tsp ground black pepper
1 small can tomato sauce

Mix ground beef, bread crumbs, eggs, 1/2 cup cheese, onion, garlic, seasoning packet, and black pepper!. Pour tomato sauce over the top and sprinkle with remaining 1/2 cup Parmesan cheese!. Place in a loaf pan and bake at 350°F for 1 1/2 hours on bottom rack of oven!.

Final internal temperature should be 170°F for ground beef!. Ovens vary, so check meatloaf after 1 hour

Shepherds Pie
INGREDIENTS:

* 1 pound ground beef, browned
* 1 or 2 cans corn, drained
* 5 or 6 potatoes, peeled, boiled, and mashed with milk and butter

PREPARATION:
Put the meat in the bottom of a casserole dish or Dutch oven!. Add corn on top of meat!. Add mashed potatoes on top, making sure the potatoes touch the sides of the dish all around!. Bake 1 hour at 350Www@FoodAQ@Com

I think mine would have to be chicken and dumplings or my mom makes these really good mashed potatos and then she puts chedder cheese, shredded, on top!.!.!.they are so good! I love my moms mashed potatos cuz they are real and not from a box!.Www@FoodAQ@Com

Minced Lamb Chilli with Rice

For two people, you will require:

1lb (550g) of minced lamb
1 400g tin of chopped tomatoes in tomato juice
1 tsp of cumin seeds (toasted for a few minutes in a dry pan then crushed)
1 red chilli (de-seeded and finely chopped)
1 green chilli (de-seeded and finely chopped)
3 small shallots (finely sliced)
2 cloves of garlic (finely chopped)
3 tsp of finely chopped fresh mint
5oz (125g) of long grain or basmati rice
2" (5cm) of cucumber (skinned, de-seeded and finely chopped)
4oz (100g) of fat free or low fat natural yoghurt

The first step is to prepare the yoghurt sauce!. Combine the yoghurt, cucumber and one tsp of the mint in a small glass bowl!. Cover with clingfilm and refrigerate for a couple of hours at least, if time permits, for all the flavours to infuse!. This can even be done the night before!.

Brown the lamb in a large saucepan, stirring frequently with a wooden spoon!. Add the tomatoes, shallots, garlic, chilli, cumin and mint and bring to a boil!. Cover and simmer gently for half an hour, stirring occasionally!.

Cook the rice per the instructions on the packet, timed to be ready at the same time as the chilli!. Form a bed of rice on each plate, add the chilli and top with a large spoonful of the yoghurt sauce!.Www@FoodAQ@Com
