When you bring your avocados home from the grocery store, do not put them in the fridge!. You can do several things to make them ripe:

Leave them out on your counter until they are soft!.

Or put them in a paper bag until they are soft!.

Or put them in a pan with a lid until they are soft!.

It only takes a couple of days!.

Then you can put them in the fridge!.Www@FoodAQ@Com

It depends on how green they are!. It may take several days!.

Avocados ripen more slowly in the refrigerator!. Restaurants will buy a case of green ones and start by leaving them out for several days to ripen!. By the time they are down to the bottom of the case, the remaining ones may already be ripe, without having been left out!.Www@FoodAQ@Com

You can usually tell the ripeness of an avocado by popping off the button on the top of the fruit!.!.!.if it comes off relatively easy, and a nice shade of green underneath, it should be ripe!.Www@FoodAQ@Com

no they wont ripen in the fridge, to tell an avocados is ripe the stork is easily removed and when pressed to check firmness near the top of the avocado is alittle soft!. If it's to soft there will be black spots through the flesh and you won't be able to eat it!.Www@FoodAQ@Com

Usually I put them in a paper bag on the counter top, Then I check them every day!. If they are ripe before I planned to use them, I'll peel and put them in a zip lock baggie with a drizzle or two of fresh squeezed lemon juice!. The lemon juice keeps the avocado from oxidizing and turning black!. By the way if you're going to mash for guacamole it's a lot better to use a fork or potato masher than a food processor for the same reasons!. The food processor incorporates too much air into the mixture and it turns black faster!. The other trick if you have leftover guacamole is the put it in a bowl (with a lid) and use cling wrap, pushing it down on the guac so no air can get in it, and cover with the lid!.
