I often buy beef roast on sale and grind in the food processor!. It's not as uniform as a grinder, but it works!. I do it often to make chili!. Just cut it in large cubes and process a few chunks at a time!.Www@FoodAQ@Com
it won't really be "ground", but you can pulse it till it resembles ground beef!.

I've never heard of anyone using a food processor to grind meat before, usually they use a meat grinder!. You might want to chop up the meat to serving size cubes first before putting them in the food processor!. Then try the chop or grind setting!. I'm supposing you'd want to keep the meat dry, but I'm doubtful it'll work if you don't put any water with the meat!. also, don't expect the meat to look like the meat ground with a meat grinder!. I'm guessing it'll look more like roughly chopped meat, or it'll come out as slush!.Www@FoodAQ@Com
I wouldn't suggest you use a food processor, it might end up like pate instead of ground meat!. Anyway if you are talking about grinding meat you might want to check into getting a stand mixer(I like Kitchen-Aid)you can get all kinds of attachments to make just about anything!. they are kind of pricey but if you are trying to make more healthy and homemade things that is what I would do!. They have grinders to pasta makers and the kitchen-aid is a real work horse!. I Love mine!!Www@FoodAQ@Com
my cuisinart has a grinding attachment and a sausage maker!. we did once puree it to almost nothing once you patty it up you cant tell the difference!. cjhsWww@FoodAQ@Com
You will need to pulse it or use an old fashioned meat grinder!.
Depending on what you are making, you could just dice it into pieces!.Www@FoodAQ@Com
