If you mix the muffin batter and leave it standing at room temperature, it may rise!. Some of the air bubbles may escape!. If that happens, the muffins will not end up rising as high as if you baked them right away!. But it's also true that some muffin recipes can be held in the pans in the refrigerator and baked at the last minute!. So there might be no difference!.Www@FoodAQ@Com
