Meatball recipe with bread crumbs (nikudango)?!
Hi,
I'm trying to follow this recipe called nikudango which is basically meatballs in sweet and sour soy sauce (kind of)!.
The ingredients for the meatballs are:
- 3/4 lb!. ground pork
- 1/4 lb!. onion, chopped
- 2 tsp ginger juice
- 1 egg, beaten
- 2 tsp soy sauce
- 2 Tbsp bread crumbs
Mix ground pork, onion, ginger, egg, soy sauce, and bread crumbs in a large bowl!. Knead well!.
Are the bread crumbs really necessary!? What is it for!? And can I use leftover bread at home for them!?
Another recipe for the meatballs is:
- ? pound of ground beef
- ? pound of ground pork
- ? cup dried bread crumbs
- 2 tablespoons of milk
- 4 tablespoons of potato starch
- salt and pepper
In a small bowl, put bread crumbs and milk!. Mix together until all bread crumbs are soaked with milk!.
In a large bowl, put the ground beef, ground pork, salt and pepper to taste!. Knead the mixture together until the meat is well combined!.
Which recipe is better!?

You basically have two distinctive recipes here!. The first one has an Asian flair, while the second one is more of a traditional meatball recipe!. I'd stick with #1 if I were you to get the effect your recipe calls for!. The bread crumbs are designed to be a "binder" of the wetter ingrediants and will assist in keeping the meatballs moist and "together'!.Www@FoodAQ@Com
I think a lot of people think they have to use breadcrumbs when using mince!.It`s just to make it go a bit further i think!.I would probably go with the top recipe and leave out the egg and the breadcrumbs,Make sure you mix it really well about 10-15 mins beat it if possible and mould into the size you want bear in mind they are going to shrink about 20%!.I put them onto a baking sheet or roasting tin and bang them into a hot oven for 15/20 minutes,Drain into a colander and add to a sauce etc!.Dont forget if you are adding breadcrumbs it will hold the fat in the meatballs a bit like a sponge!
