I inherited my mom's old iron skillets!. it they are seasoned properly they are almost non-stick!. you can use them like a griddle for cooking meat, you can bake cornbread in them, you can cook over a fire with them on a grill or campfire!. you can use them to blacken fish or steaks!. the food you cook in them will have trace amounts of iron it!. i recommend that every one have at least one 10" iron skillet!.Www@FoodAQ@Com

The benefits of an iron skillet over others are many:

Even heating
Better searing / able to cook at very high temperatures
once seasoned, is far better non-stick pan than any I've used
Oven, grill, stovetop ready

You can cook anything in your iron that you would in anything else EXCEPT tomato bases!. It will give it a very tinny taste!.Www@FoodAQ@Com

I have a 10 inch skillet I use for everything and a 10 or 12 inch flat griddle for pancakes, eggs, grilled sandwiches which I can't live without!.

its relatively low cost, especially when compared with other cooking metals that conduct heat well

the nonstick surface can develop over time to be one of the best that you can find on a pan, including those that are manufactured to be nonstick

and the fact that with proper maintenance it can last for generations!.
