Urgent!! substituting cream for milk???!
i want to bake some muffins and we dont have cream so i was wondering would sub!. it for milk be a no-no or is it ok!?
heres the recipie if it helps:
2 cups self raising flour
125g of chopped butter
2/3 cup of caster sugar
1/2 cup of cream
2 eggs
oh and can i use raw sugar instead of caster!?

As the others have said, yes - you can subtitute the milk instead of cream and the raw sugar instead of caster!. It will make the muffins less rich and I would definately pour less milk into the mixture or it may get too runny!. also, just realise that you need to use a lot more caster sugar than raw sugar to get the same sweetness - and raw sugar may not mix very well into the muffins so you may get lumps of sugar throughout (sort of the difference between using chocolate chips in muffins compared to grated chocolate)!. It should all still work though - so hope it turns out yummy!Www@FoodAQ@Com

It'll work just fine!. The taste might be a little different, if this is a familiar recipe, but it will be good!. Ofttimes, the "lighter recipe" books and articles recommend going through one's old recipes and substituting milk for cream -- and things like that -- to make the recipes healthier!.
