Question: Switzerland foods!?
so, for french class, we have to pick a french country, so me and some friends picked switzerland!.
my job is to do the cooking part, what are some easy foods that i can make, like the night before or so for a class of 30-35!?
please leave a recipe too!

Fondue

Cheese Fondue- this is more traditional

Swiss Cheese Fondue – serves 4-6 people
Makes about 2 ? cups

2 cups shredded Gruyere Cheese (8 0z)
2 cups shredded Emmental cheese (8 0z)
1 tbsp!. cornstarch

1 cup dry white wine- such as sauvignon blanc, I like pinot grigio
1 tbsp!. fresh lemon juice, strained
1 clove garlic, crushed or if you really like garlic, mince it to be left in

Optional
1 tbsp brandy, kirsch, or Cognac (optional)
Freshly ground white pepper or nutmeg to taste

Toss together the cornstarch and cheese in a large mixing bowl and set aside!. In a large heavy sauce pan, bring together wine, lemon juice and garlic to a simmer over medium heat!. (Remove garlic if you want a lightly flavored fondue, I usually mince it and leave it in!.) Add handfuls of the cheese and stir constantly and gradually add more cheese!. Do not boil mixture!.

When mixture is melted and smooth add brandy, pepper and nutmeg to season if desired!. Transfer to a fondue pot over a medium heat!.

Notes Kirsch is a traditional Cherry liquor and can be used to flavor the fondue!. If the cheese is very high quality, it does not necessarily need to be used!. Since cheese is the major star of the recipe, buy good quality cheese!.

Acids such as the lemon juice keep the proteins from being as stringy!. The cornstarch helps keep the fondue from separating!. If the cheese is too hard, add a little wine!. If the fondue is too soft, add in a little more cheese!.

Dippers
Artisan quality breads such as those at Bread Craft or from On the Rise are good!. Anything with a good crust helps give you a variety of textures to blend with the creamy cheese!. Cut bread into ? inch cubes so they are bite sized!. Figure on a minimum of 1-2 cups of bread per person!.

Breadsticks, crackers, pretzels work well with cheese fondues!.

Tart fruit apples like Granny Smith and Bosc pears are also good!. Cut them up to bite sized but dip them in a solution of water and lemon juice to decrease browning!.

Use a mixture of chopped/blanched vegetables, about ? pound per person!.
Broccoli, carrots, potatoes, peppers, asparagus are suggestions!.

Potatoes should be cooked separately until done before use!. Cut 1 pound of unpeeled red potatoes, cut into large chunks in a large sauce pan 1 tablespoon of kosher salt and cover with water!. Simmer for 7-8 minutes, drain and cool!.

At the end of the party, peel of the crust of cheese that is browned from the bottom of the pot and share it if you care to!. It is delicious!.

Chocolate Fondue- serves about 6
This is not traditional but fun!.
? cup heavy cream
1 cup good quality chocolate chips or chopped dark chocolate

Optional
2 tsp brandy
1 tbsp!. espresso powder

Heat cream in a small saucepot until steam rises from the pan and small bubbles form at the edge!. Add in chocolate chips and stir until blended!. Turn off heat!. Allow to stand 3 minutes then stir in brandy and espresso powder as desired!. Transfer to a fondue pot!.
Other liquors also go well with chocolate feel free to experiment!. Some options are Nocello, a walnut flavored liquor, Grand Marnier, Crème de menthe, Bailey’s Irish Crème, Amaretto, Kahula,

Graham crackers, with or without marshmallow creme
Pretzels
Cookies
Shortbread
Shortcake
Marshmallows
Fresh fruit pieces- pineapple, strawberries, blackberries, bananas, apples, apricot, oranges work well!.
