pepperoni and salami are remarkably easy to make, it would blow your mind really!. Basic salami is just pork, salt, and sodium nitrate, in a casing, hung up in your garage for 6-8 weeks, (yes, raw pork)

Salamis and pepperonis are fermented, so it's natural bacteria and yeast which do the cooking and preserving!. The salt and sodium nitrate ensure that only the right bacterias take hold!.

A great resource for this, as well as recipes for bacon, prosciutto, pancetta etc is the Culinary Institue of America's 'Garde Manger'!. I used this book to get started in this and it was a great help!. You should be able to get it on Amazon!.

i put cayenne peppers in vinegar and make pepper vinegar!. i don't know if you have to go through the canning process!. they seem just like peppers in vinegar when i buy them in the store!.Www@FoodAQ@Com
