Keep avocados from getting too ripe?!


Question: Keep avocados from getting too ripe!?
I found a good deal on avocados yesterday-Monday (I need them for guacamole on Saturday)!. How can I keep them from getting too ripe before then!?

I have heard refridgeration makes them blacken-is this true!? Thanks!.Www@FoodAQ@Com

Leave them on the counter until they are nice and ripe, then refrigerate them to slow down the ripening process!. They'll be fine!. They don't blacken!.Www@FoodAQ@Com

They will turn somewhat brown if refrigerated, unprocessed!. You might be able to mash them up, add some lemon juice (that retards oxidation) and store it in a container with as little air in it as possible!. One way to do that is put it in a zip lock plastic bag, seal it most of the way, but leave a straw end sticking inside it!. Then suck the air out, pull the straw out quickly and finish sealing the bag!. This would be experimental, I have never actually tried this exact procedure!. If you don't get a good answer here pretty soon, call a local Mexican restaurant for advice!.
