Question: Dinner with my Mother-in-Law!.!.!.!.!.!.!?
My Mother-in-Law is coming over for dinner on Thursday!. I don't know what to make for two people!. I need a recipe that is quick!. I have about an hour to make dinner from start to finish!. I really have trouble cooking for only two people!. Any help is greatly appreciated!Www@FoodAQ@Com

Ingredients
# 8 ounces cream cheese
# 1 cup parmesan cheese (from the can)
# 1/2 cup butter
# 1/2 cup milk (plus more if sauce is too thick)
# 3 garlic clove, minced
# 1 (16 ounce) package frozen mixed vegetables (your choice)
# 1 (12 ounce) package frozen cooked shrimp, thawed, tails removed
# 8 ounces vermicelli, broken in half
# 1/2 cup pine nuts, toasted
# 1/2 teaspoon cracked black pepper
# 2 teaspoons dried parsley
Directions


Start a large pot of lightly salted water boiling!.

In another saucepan, combine cream cheese, parmesan, butter, garlic and 1/2 cup milk over medium heat until well blended, stirring occasionally!.

Microwave vegetables until heated through, about 5 minutes; drain!.

Add shrimp and vegetables to cream cheese mixture; stir well to combine!.

Continue cooking over medium-low heat until shrimp is heated through, about 10 minutes!. (If sauce is too thick, add more milk a tablespoon at a time until desired consistency!.)!.

Add pasta to boiling water and cook until al dente, about 8 minutes; drain!.

Combine pasta with sauce and toss lightly to combine!.

Reserve a handful of pine nuts; add rest to pot and stir to combine!.

Sprinkle remaining pine nuts on individual servings after putting on plates!.Www@FoodAQ@Com

Melt 3 TBLS butter in a large skillet!.

Sear two boneless skinless chicken breast over medium heat in the melted butter!.

Remove to plate leave drippings!. Melt 3 more TBLS of butter and saute sliced fresh mushrooms till slightly limp!. Set mushrooms aside leave drippings in skillet!. You can use your own judgment here, I like lots of mushrooms so use a lot!.

Add 3 TBLS butter to skillet and whisk in 1/3 cup flour to melted butter and drippings!.

When flour is throughly mixed into butter/drippings!. Whisk in one can of low fat chicken broth, Swanson's is best!. Whisk in 4 TBLS milk!. Heavy cream tastes the best but plain milk can be substituted!.

Return chicken and mushrooms to skillet!. Salt and pepper lightly and simmer covered for 20 minutes!.

Serve over cooked rice!. White or Brown!.

You can add chicken breasts to this exact recipe up to 8 without changing any other ingredients!.

This dinner will take only about 10 minutes of prep and is simple elegant and healthy!. Serve Pound cake with fresh raspberries and whipped cream for dessert!. ( Get cake in local bakery) You can also serve chicken ( 45 minutes in oven) with fresh herbs, or a pork chop with rosemary ( 40 minutes in oven)!. If you have a crock pot, it's a piece of cake!. Make barbequed chicken in the crockpot, have a scalloped potato casserole ready to pop in the oven, steam some broccoli and cheese and buy some croissants from the store to heat up while the potatoes are cooking!. Easily done in much less than an hour with prep work done the day before!. For dessert, buy a Mrs!. Smith's apple pie (or peach or whatever!.) These aren't very formal, but if your mother in law isnt real fancy, these are quick, easy and very tasty!. This is a mexican dish I make all the time!.

Tostadas:
1 lb ground beef, (7% fat, don't use one high in fat content)
1 package corn tortillas
1 can 12 or 14 oz Rosarito refried beans
shredded cheddar cheese
chopped lettuce
salsa of your choice, pace or something like that
Vegtable oil for frying

In a large frying pan, brown the ground beef, and season it generously wilth season salt, garlic salt, and pepper!. Brown until completely no pink remains!. Transfer to a paper towel lined plate to soak up any remaining grease, then cover with foil to keep warm!.
Next, wipe skillet clean, then pour enough oil in it to fry your tortillas!. Fry them on med heat until they are crispy and brown on each side, then place them on paper towels to drain!. Heat up your beans in the microwave!.
To assemble, you take a fried tortilla, smear a layer of the beans on first, then top with a layer of the meat, then your cheese, then lettuce, then salsa!.
These are soooooo tasty!. Serve with a fork so you can eat them easier!.Www@FoodAQ@Com
