The trick is to lay out the cucumber-slices on paper towels, and sprinkle with a little salt!. That will break the cell membranes of the cucumber, and release the water in the cells, which is then soaked up by the paper towels!.

The real, old fashioned recipe calls for white bread - back when white bread was classier (because it was more expensive to shell the grain, before making the flour)!.

I personally prefer wholemeal bread, because it actually tastes better :)
But if you're making real, traditional afternoon tea, you should use white bread!.

Don't avoid salt, to avoid high blood pressure!. Avoid salt if you already HAVE a high blood pressure!.

DO NOT USE WHITE BREAD!!! it tends to fall apart and get soggy due to the moisture in the cucumber!. Use pumpernicle bread!. It is amazing and the flavors blend together so well!. CUCUMBER SANDWICHES

1 lg!. cucumber, cleaned but not peeled
8 oz!. cream cheese, softened
3 green onions, chopped
Mayonnaise as needed
Celery salt
Garlic powder
Paprika, if desired
Sandwich bread, white or other

Shred the cucumber and allow to drain over a paper towel until most of the liquid is gone!. Mix the cream cheese and mayonnaise until smooth and spreadable!. Stir in chopped onions and add garlic powder and celery salt as desired!. Add drained cucumber, stir!.

Usually, I buy a regular loaf of white bread, spread it with some softened cream cheese or whipped cream cheese!. Then, I slice the cucumbers and lay them on a paper towel and gently dry off the exterior moisture--not a ton, just dab!. A traditional English cucumber sandwich is white bread (fresh, not the nasty bag stuff) with crusts cut off, buttered, very thin slices of cucumber!.
