Basic Scone Recipe:
2 cups all-purpose flour
1 tablespoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
3 tablespoons butter
1 egg, beaten
3/4 cup milk (approx!.)

# Mix the dry ingredients together in a medium bowl!. Cut in the butter until the mixture resembles course crumbs!. Stir in the egg!. (If you are using one of the variations below, this is a good point to add nuts, dried fruit, chocolate chips, cheese, etc!.)

# Gradually add the milk until a thick dough is formed!. (It may take more or less than 3/4 cup!.)

# Turn out the mixture onto a floured board and knead lightly!. Roll out the dough to 3/4" thickness and cut into rounds with a 2" cookie cutter!. Gather the trimmings and lightly knead, roll, and cut them as well!.

# Place the rounds about 1" apart on a lightly greased baking sheet!. Brush the tops with a little beaten egg or milk!. Bake in a preheated 450° oven for about 10 to 15 minutes, until golden brown!. Serve warm!.

# Makes 12 to 16 scones, depending on the recipe version used!.

Variations of the Basic Scone Recipe:

* Spiced Scones: Add enough cinnamon, nutmeg, cloves, and allspice to the dry ingredients to total 1/2 teaspoon!.

* Walnut Scones: Add 3/4 cup finely chopped walnuts!.

* Cheddar Scones: Add 1 cup grated Cheddar cheese and 1/8 teaspoon dry mustard!.

* Dried Fruit Scones: Add 1/2 cup raisins, currants, cranberries, or chopped dried apricots!.

* Chocolate Chip Scones: Add 1/2 cup white or dark chocolate chips and 1 teaspoon vanilla to the basic recipe!.

Basic British Scones

2 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1 pinch salt
1/4 cup margarine
1/8 cup white sugar
1/2 cup milk
2 tablespoons milk

Preheat oven to 425 degrees F (220 degrees C)!. Line a baking sheet with parchment paper!.
Sift the flour, cream of tartar, baking soda and salt into a bowl!.
Rub in the butter until the mixture resembles fine breadcrumbs!. Stir in the sugar and enough milk to mix to a soft dough!.
Turn onto a floured surface, knead lightly and roll out to a 3/4-inch thickness!. Cut into 2-inch rounds and place on the prepared baking sheet!. Brush with milk to glaze!.
Bake at 425 degrees F (220 degrees C) for 10 minutes then cool on a wire rack!. Serve with butter or clotted cream and jam!.

my daughter is four and we actually made these yesterday!. normally i would make mu own frosting (cream cheese, butter, powdered sugar, vanilla), but i was feeling lazy so we used store bought frosting!. then we used leftover jelly beans from easter to decorate the tops!.!.!.!.

Plain White Cake Cupcakes

/2 cup butter or shortening at room temperature!.
1 3/4 cups sifted all-purpose flour
1 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1 teaspoon vanilla OR 1/2 teaspoon vanilla and 1/2 teaspoon almond flavoring!.

Pre-heat oven to 375 degrees!.
Put shortening in a mixing bowl!.

Sift dry ingredients together in separate bowl!.

With a mixer, mix the dry ingredients in slowly with the shortening!. Add 1/2 cup milk and the egg to the dry ingredients and beat until flour is fully moistened!. Add the remaining milk and the vanilla and/or almond flavoring and beat for about another minute!.

Place paper liners in muffin pan and fill halfway full with the batter!.

Bake at 375 degrees F for 15 to 18 minutes or until a cake tester or toothpick inserted into the middle of a cupcake comes out clean!. Makes about 18 cupcakesWww@FoodAQ@Com

1/2 cup sugar
1 cup apple juice
1/3 cup milk
1-2 apples, chopped
1-2 tsp each of cinnamon, cloves and nutmeg
3 cups whole wheat flour
4 tbsp baking powder
1/2 cup raisins (optional)

mix all ingredients, form into 2 balls and flatten, cut like a pizza and place triangles on a baking sheet
bake in the oven for 12-15 min at 400°Www@FoodAQ@Com
