Answers:
you need about 0!.5cm or 1/4inch of vegetable oil in the pan (veg oil burns at a higher temp than olive oil and is better for frying) heat it to a medium heat!. You will know if the oil is hot enough if you put in a little bit of bread crumb and it gently fries to golden - not go black straight away!. the chicken breasts should cook in the pan, about 4 mins on each side if they are not really thick!. no need to put in the over!. drain on absorbent paper!.

ps - put in flour first, then dip in beaten egg, then breadcrumbs!. the flour first helps the egg to stick!.Www@FoodAQ@Com

you want to cover the bottom of skillet about 1/2" deep with the oil (use the veg!. oil for the chicken) let the oil heat (start on high then reduce to med!. high)
(test by dropping a drop of water in, if it sizzles it is hot enough) add chicken pieces and brown!.!.!.remove brown pieces and continue adding pieces till all is browned!. Reduce heat and discard all the oil, put chicken back in skillet and cover let simmer on low about 20 min!. Or place in oven proof container and bake @ 350' for 20 min!.Www@FoodAQ@Com

Dip your chicken and heat 1/2 in of either oil in a frying pan!. If you have an electric stove heat it to # 6!. Fry chicken 7-10min on each side!. Standby the oil and don't leave it while your heating it up, cuz it can get to hot andgo up in flames, I have experience trust me!.Www@FoodAQ@Com

When I do them I put them in flour, beaten egg, and then bread crumbs!. Put enough oil to cover them half way and cook until golden brown on both sides on medium heat!.Www@FoodAQ@Com
