I like making a simple Zucchini and Yellow Squash Casserole:

2 Zucchini roughly chopped
2 Yellow Squash roughly chopped
8oz!. Sliced Mushrooms
1 Onion
1/2 a Green, Red, Orange, and Yellow bell pepper
Butter or Margarine
Bread Crumb
Shredded Cheddar Cheese

Preheat oven to 350!. Place all the vegetables into a baking dish and ad your favorite seasonings!. Dot with some butter or margarine!. Baked for 45 to and hour or until the vegetables are tender!. Melt some butter or magarine and combine with the bread crumbs!. Then ad the shredded cheese to the mixture and top the casserole 15 minutes before it is completely done!. Bake for the remaining 15 minute or until the top is golden brown!.Www@FoodAQ@Com

Grilled Asparagus
Marinate Asparagus Spears (10 per person) in olive oil, garlic cloves (2), and sprinkle a bit of kosher salt!. Grill 3-5 minute on each side!.

Nice addition to bbq meals!. Can be done on a stove top grill with nice results too!.Www@FoodAQ@Com

i'm a freak for soup - even when the weather starts getting warm, but even on a warm day, this soup is super tasty as springtimey!

Green Minestrone

2 tablespoons extra-virgin olive oil, 2 turns of the pan
4 slices pancetta or 1/4 pound thick cut prosciutto, chopped
1 medium onion, chopped
2 ribs celery, chopped
2 large cloves garlic, crushed
1 medium zucchini, diced
1 bay leaf, fresh or dried
1 can white beans, cannellini
1 can garbanzo beans, ceci
Salt and freshly ground black pepper
8 cups chicken broth or stock
1 cup ditalini pasta or mini penne pasta
1/2 pound green beans, trimmed and cut into 1-inch pieces
10 ounces triple washed spinach, stems removed and coarsely chopped, or any other dark greens
1/2 cup grated Parmigiano-Reggiano or Romano, plus extra to pass at the table
12 to 16 leaves fresh basil, torn or shredded or 1/4 cup chopped parsley leaves

Heat a soup pot over medium high heat!. Add oil and pancetta or prosciutto!. Saute 2 minutes and add onions, celery, garlic, zucchini and bay to the pot!. Season vegetables with salt and pepper, to your taste!. Saute vegetables 5 minutes, stirring frequently!. Add white beans, garbanzo beans and chicken broth to the pot!. Cover soup and bring to a boil!. Add pasta and green beans to the soup and cook 8 minutes, or until pasta is just tender!. Stir in spinach to wilt, 1 minute!. Stir in grated cheese and ladle soup into bowls!. Top soup with torn or shredded basil or chopped parsley!.Www@FoodAQ@Com

Black bean & mango chicken salad

16 oz!. black beans, drained
10 oz!. frozen corn
1 C chopped mango
1/2 lb!. grilled chicken
1/2 C chopped red pepper
1/3 C fresh cilantro
1/3 C red onion
1/4 C lime juice
1 C Italian dressing

Toss all ingredients together, refrigerate at least an hour and serve in a large salad bowl with chips or crackers!. You could even put it into pita bread and cut it into wedges!.Www@FoodAQ@Com
