Do you have a recommendation for chicken fried steak and gravy?!
I cook a lot of different foods but this has never been one of them!. I have seen a lot of recipes!. Some using buttermilk; some using whole milk!. I'm interested in what you fellow cooks think!. also, which gravy goes better the white or brown gravy and please feel free to include recipes!. Making this tonight and trying to decide which way to go!. Really appreciate some direction and guidance!. :*)Www@FoodAQ@Com

to make the CFS
pound a cube steak down to about 1/4 to 1/2 inch thickness
dip the steak into a dish of buttermilk, then dredge it into flour seasoned with salt and pepper!. gently press the flour into the steak!.
dip it again into the buttermilk, then again into the flour!. that should give you a nice breading!.
heat oil for deep frying in a wide pot, like a deep iron skillet, careful not to use too much oil, 2 inches in the bottom should do it, but not too much that it will spill over!.
fry the steak till golden on each side, probably about 4 minutes each side!.
remove steak and drain on paper towels!.
white gravy is a must, only yankees eat the brown stuff!.
pour away all the oil except for 2 or 3 tablespoons!.
add 2 or 3 tablespoons flour to make a thick roux!.
add 2 cups whole milk whisk to break up roux!.
bring to a boil!. remove from heat!. season with salt and pepper!.

If your meat is thick, pound it!. Make a beer batter and fry!. Keep warm in oven, using a couple of tablespoons of oil and crumbs!. Make a roux and if you still have the buttermilk, stir in to desired thickness!. Grind cracked pepper (or black pepper) to desired temp!. (I like to also fry onions and pull out when down, while frying steaks, then add back after gravy is cooking (Or put over steaks in the oven)!.Www@FoodAQ@Com

I know this sounds yummy and interesting to make, but really, why make an unhealthy meal, especially, since you're the cook, when you have the power to make it alllll the way healthy!. You choose the ingredients!. You choose how to cook it!. Frying is nawt the way to go! If you do fry, though, be sure to use extra virgin olive oil!.Www@FoodAQ@Com
My favorite Chicken Fried steak recipe is from Southern Living from Thread gills restaurant!.
2 large eggs
2 cups milk
1 1/2 cups flour
1 tbsp Meat seasoning, see below
8 6 oz cubed steaks
cooking oil for frying such as peanut, canola
Whisk together eggs and milk and set aside!. Combine flour and meat seasoning and mix well!. Dip steaks in flour, then egg mixture and flour again!.
Heat oil to a depth of 3/4 inches in a deep heavy skillet or dutch oven!. Fry steaks in batches over high heat 1 1/2 to 2 minutes until golden on each side!. (I would use about 350-360 degrees F!.) Remove steaks and reserve 2 tbsp of drippings!.
Add in 2 tbsp of flour and make a roux, stir and cook gently for 1-2 minutes!. Slowly add 2 cups of whole milk and bring to a boil to thicken and season with salt and pepper!.
Enjoy!
