Question: I have bought salmon steaks for dinner this evening!.!.!.!?
Does anyone have any great ideas with what I should do with them and what I should serve with them!? They were on special offer in M&S today!.!.!.!.yummy!!

I want to treat my fella as he had a terrible day at work yesterday, and to top it all he cooked & burnt the pan!.!.!.! Bless - tee hee!! So, I want to make it up to him!.Www@FoodAQ@Com

I cook the salmon with a bit of chilli powder rubbed on, then add it to sticky rice with peas!. F**kin lush !.Might have to treat myself to it tonight now!Www@FoodAQ@Com

Brocolli & Salmon Bake



Preparation time less than 30 mins

Cooking time 10 - 30 mins



Ingredients
1 onion, chopped
1 tsp olive oil
20g/?oz butter
20g/?oz plain flour
150ml/5fl oz milk
50g/1?oz parmesan, grated
150g/5?oz salmon fillet or steak
150g/5?oz broccoli, cut into florets and steamed
2 carrots, cut into batons and steamed
6 cherry tomatoes



Method
1!. Preheat the oven to 220C/425F/Gas 7!.
2!. Gently fry the onions in the oil in a saucepan and cook until soft!. Stir in the butter and the flour!. Mix thoroughly, cooking on a low heat for one minute!.
3!. Pour in the milk, gradually, until everything is combined!. Cook for two minutes!.
4!. Add half the cheese to the sauce and reserve the other half!.
5!. Meanwhile, pan-fry the salmon fillet or steak for one minute on each side!.
6!. Lay the salmon steak in a small oven-proof dish!.
7!. Add the broccoli, carrots and cherry tomatoes to the dish!.
8!. Pour over the sauce and top with the rest of the cheese!.
9!. Bake in the oven for ten minutes or until bubbling and golden!.Www@FoodAQ@Com

Oven cook at a low temperatue!. Rap them in foil singly with plenty of butter, some sliced garly and a few drops of tabasco sauce - It wont be spicy I promise, just really brings out the flavour!Www@FoodAQ@Com

My fella loves salmon too and that is a lovely idea to cook him something nice!.

When I cook it for my guy, I just grill it very simply with a little bit of green pesto and then serve with potatoes and vegetables or salad!.

Right, brush the steaks with olive oil and sprinkle with sesame seeds!. Put under the grill at about 220 degrees for 10 mins!.

In the meantime, stir-fry some Straight to wok noodles, and steam some asparagus!. In a bowl, mix 2 tbsp olive oil, 2 tbsp soy sauce, 1 tbsp lime juice, a tsp honey and 1 chopped chilli!. Mix well!.

When the noodles and the asparagus are done, pour them into the bowl to coat with the dressing, dish up onto some warmed plates and put the salmon on top!.

i normally cook salmon fillets in the oven with soy sauce and honey - so yummy (loads of honey!) i have also heard from my friend that doing salmon in philadelphia and breadcrumbs is meant to be lovely!.Www@FoodAQ@Com

Here is a salmon recipe that I love!. Make a mainade of half soy sauce and half maple syrup!. Brush the salmon with the mixture and then put it under the broiler rebrushing it again when you flip the steaks!.

With that try a spanish yellow rice for arroz con pollo-usually in a yellow box at the market!. Alond with that Either broccoli sauteed in olive oil and garlic (added in the last few minutes of cooking) or asparagus!.Www@FoodAQ@Com

Orange Salmon Steaks
6 Salmon salmon steaks fresh, 1 inch thick
1/8 teaspoon black pepper
1 each orange
1/2 teaspoon salt
1 tablespoon butter
1 slices orange for garnish

Directions
Season steaks with salt and pepper!.

Blend juice of half the orange with butter!.

Cut remaining orange into 1/2 inch thin slices!.

Brush steaks with half of the orange butter!.

Set them on a greased grill, 3-4 inches from heat!.

Cook 5 minutes, until steak is brown!.

Turn, brush with remaining orange butter and broil 5 minutes
more or until fish flakes easily when tested with a fork!.

I was going to have that tonight but i am having steak instead!.

Do them in the oven on 190 Celsius, wrapped in foil, with oil, butter, salt and pepper in with it!.

Creates a nice sauce and cooks the salmon a treat! 15 minutes is all you need!.

Here's three ways I cook salmon:
- coat baking dish with butter/margarine/cooking spray, add salmon, shake on some lemon pepper and dill, and bake
I serve this dish on a bed of pasta with green beans or asparagus!.
- put a steak of salmon in foil, toss in some honey and brown sugar, grill it till it's done, you can also bake it!. I serve this dish with a baked potato and grilled veggies like eggplant or zucchini
- coat baking dish with butter/margarine/cooking spray, add salmon, coat salmon with butter/margarine and sprinkle bread crumbs and Parmesan cheese on top of it!. Bake

Pan Seared Salmon II
NGREDIENTS

* 1 teaspoon butter
* 4 (4 ounce) fillets salmon
* 2 teaspoons vegetable oil
* 1/2 red bell pepper, diced
* 1/2 yellow bell pepper, diced
* 2 teaspoons garlic, finely chopped
* 1 lemon

1!. In a large skillet, melt the teaspoon of butter and fry the salmon fillets until they are flaky on the inside and a little golden on the outside!.
2!. In a medium skillet, place the oil, red pepper and yellow pepper; saute for 3 minutes!. Set aside!.
3!. In a small bowl, combine garlic and lemon juice!. Drizzle over the finished salmon fillets!. Place the cooked peppers on top of the filets!. Serve immediately!.Www@FoodAQ@Com

Dilled Salmon Pasta Salad

Ingredients:
1-1/2 cups tricolored spiral pasta
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
2 tablespoons chopped onion
2 tablespoons minced fresh dill or 2 teaspoons dill weed
1 cup fully cooked salmon chunks or 1 can (7-1/2 ounces) salmon, drained, bones and skin removed
Mixed salad greens
Directions:
Cook pasta according to package directions!. Meanwhile, in a large bowl, combine the next six ingredients!.
Drain and rinse pasta in cold water; add to sour cream mixture!. Stir in salmon!. Cover and refrigerate!. Serve over salad greens!. Yield: 2 servings!.


Seared Salmon with Balsamic Sauce

4 salmon fillets (4 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons canola oil
1/4 cup water
1/4 cup balsamic vinegar
4-1/2 teaspoons lemon juice
4 teaspoons brown sugar
Directions:
Sprinkle both sides of fillets with salt and pepper!. In a large nonstick skillet, cook salmon in oil over medium heat for 10-15 minutes or until fish flakes easily with a fork, turning once!. Remove and keep warm!. Combine the water, vinegar, lemon juice and brown sugar; pour into skillet!. Bring to a boil; cook until liquid is reduced to about 1/3 cup!. Serve over salmon!. Yield: 4 servings!.

Salmon with Fruit Salsa

Ingredients:
2 cups chopped seedless watermelon
1-1/2 cups cubed fresh pineapple
1/3 cup chopped sweet red pepper
1/4 cup chopped green onions
1/4 cup minced fresh cilantro
1/4 cup orange juice
1/4 cup lime juice
1 teaspoon chopped jalapeno pepper
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 salmon fillets (6 ounces each)
Directions:
In a large bowl, combine the first eight ingredients; add 1/4 teaspoon salt and 1/8 teaspoon pepper!. Let stand at room temperature for at least 30 minutes!.
Coat grill rack with cooking spray before starting the grill!. Sprinkle salmon with remaining salt and pepper!. Place on grill rack!. Grill, covered, over medium heat for 6-9 minutes on each side or until fish flakes easily with a fork!. Serve the salsa with a slotted spoon with salmon!. Yield: 4 servings!.


Honey-Dijon Salmon and Asparagus

Ingredients:
1-1/2 teaspoons cornstarch
2-1/4 teaspoons butter, melted
1 teaspoon Worcestershire sauce
2 tablespoons honey
1 tablespoon Dijon mustard
Dash white pepper
2 salmon fillets (4 ounces each)
1/4 cup chopped walnuts
1/2 pound fresh asparagus, trimmed
Directions:
In a small bowl, combine cornstarch, butter and Worcestershire sauce until smooth!. Stir in the honey, mustard and pepper!.
Place each salmon fillet on a double thickness of heavy-duty foil (about 18 in!. x 12 in!.)!. Drizzle with honey mixture and sprinkle with walnuts!. Place asparagus around salmon!. Fold foil around salmon and seal tightly!. Grill, covered, over medium heat for 15-20 minutes or until fish flakes easily with a fork!. Yield: 2 servings!.


Grilled Herbed Salmon

Ingredients:
1/2 cup butter (no substitutes)
1/3 cup lemon juice
2 tablespoons minced parsley
1-1/2 teaspoons soy sauce
1-1/2 teaspoons Worcestershire sauce
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 salmon fillet (2-1/2 to 3 pounds and 3/4 inch thick)
Directions:
In a saucepan, combine the first nine ingredients!. Cook and stir over low heat until butter is melted; set aside!. Coat grill rack with cooking spray before starting grill!. Place salmon skin side down on grill!. Grill, covered, over medium-hot heat for 5 minutes!. Baste with butter sauce!. Grill 10-15 minutes longer or until fish flakes easily with a fork, basting frequently!. Yield: 6-8 servings!.


Poached Salmon

Ingredients:
1/4 cup finely chopped onion
1 garlic clove, minced
2 tablespoons butter
1-1/2 cups water
3/4 cup chicken broth
1/2 teaspoon dill weed
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon dried parsley flakes
1/2 teaspoon dried tarragon
4 salmon steaks (1 inch thick)
SAUCE:
1/2 cup finely chopped zucchini
1/4 cup mayonnaise
1/4 cup plain yogurt
2 tablespoons chopped green onions
Directions:
In a large skillet, saute onion and garlic in butter!. Add the water, broth and seasonings!. Add salmon; bring to a boil!. Reduce heat; cover and simmer for 20-25 minutes or until fish flakes easily with a fork!.
Meanwhile, in a small bowl, combine sauce ingredients!. Serve with the salmon!. Yield: 4 servings!.


Herbed Salmon Steaks

Ingredients:
1/4 cup butter, melted
2/3 cup crushed saltines (about 20 crackers)
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
4 salmon steaks (6 to 8 ounces each)
Directions:
Place butter in a shallow dish!. In another shallow dish, combine the cracker crumbs, Parmesan cheese, salt, basil, oregano and garlic powder!. Dip salmon into butter, then coat both sides with crumb mixture!.
Place in a greased 13-in!. x 9-in!. x 2-in!. baking dish!. Bake, uncovered, at 350° for 30-35 minutes or until fish flakes easily with a fork!. Yield: 4 servings!.

All of these would be wonderful served with a garden salad, and maybe some mashed potatoes!. also pick up some cresent rolls or some biscuits!.!.!.!.!.!. yummy!Www@FoodAQ@Com
