Making fresh green beans... need help?!


Question: Making fresh green beans!.!.!. need help!?
I know I need to trim them but do I just trim both ends off!? also I want to make a healthier version of green beans with bacon so I bought reduced fat real bacon bits!. How should I cook them to make sure the green beans soften!? Normally I would boil them!. Should I boil them and add bacon or should I saute them in a little bit of olive oil and then add bacon!? I am afraid if I saute them they won't get soft enough!. Help!?!?Www@FoodAQ@Com

Trimming both ends is best, but it's really the stem end that is most important!.

Boil the green beans to make them soft, then drain them and saute them slowly with a bit of olive oil and the bacon bits!.Www@FoodAQ@Com

Just snip the root end of the bean!. Boil water with a lot of salt (like the ocean) in it!. Then "blanck" the beans in the water for 3-5 minutes or so and remove to ice water bath!.

later!.!.!.dry the beans in a colander or on a towel!. Get a pan hot and bacon until almost crispy!.!.!.drain the bacon fat or use it instead of the olive oil!. mmmmm!.!.!.bacon fat!.!.!.!.!. Be sure to season with salt and pepper (white ideally)!. Onions sliced with the bacon just before its done works well too!.Www@FoodAQ@Com

Yes trim both ends, there may then be a 'string' that you'll want to pull off the side as it's not much for mouth feel!

Start by blanching (boiling) them and then if you want to saute' them for added flavor you may!. But, you are right, just sauteing may not be sufficient if you like them soft!. I prefer mine with a bit of crunch, so I just saute'!.Www@FoodAQ@Com

Just snap the ends off!. If you like the french cut you'll need to make two or three slices lengthwise as well, that'll make 'em cook faster if you're going to saute them too!. Otherwise, I prefer to steam veggies, it retains the vitamins!.Www@FoodAQ@Com

yes i usally trim both ends if needed!.
Best way i know to make them is to steam them !.!.!. the flavor is great that way!.
and you can put the bacon over the of them in the steamer (the fat will drip down into the water leaving you with the flavor and not all that fat) once they are cooked to the tenderness you like you can put them in a bowl and toss with a little olive oil!. (if you want the bacon, get the bacon bits!.!. again less fat or turkey bacon)

Ummm!.!.!.!.!.when I used to have a garden (a loooooooooong time ago)and grow my own green beans!.!.!.this is how I would cook them!.

Snap both ends off!.!.!.!.break in bite size pieces!.!.!.rinse in water thoroughly 2 or 3 times!.!.!.!.!.( I had a friend who would actually use soap & water!.!.!.!.!.a little extreme!.!.)
anyway;
put beans in a large pot!.!.!.
add ham hock (or 2)!.!.!.!.
a whole chopped onion (or 2)!.!.
4 or 5 potatoes peeled & quartered!.!.!.
cover with water!.!.!.!.
cook on low to medium heat 3-4 hours!.!.!.
when done!.!.!.!.!.take the bone and fatty part of the ham hock out and discard!.!.!.!.
serve with your favorite meat!.!.!.cornbread or biscuits!.!.!.!.sliced tomatoes!.!.!.

ummmmm goooood!
