Question: Anyone out there have a good recipe for a good seafood dinner!?
I was looking for a good seafood newburg recipe that has a white based sauce!. When I was in service, they cooked a really good seafood newburg, but it was white sauced one and it was thick and rich!. I found some on line, but nothing matched up to the stuff that was made in service, believe it or not!. Anyone from like Maine or out east, where they have excellant lobster, crab and Jumbo shrimp and fish, I would appreciate some help on this!. I don't really want to recipe that calls for tomato anything, it has to have a white sauce!.!.!.

Answers:
Newburg Sauce (pick ur favorite seafood or chicken)


2 tablespoons butter
2 tablespoons all-purpose flour
2 cups water
2 teaspoons Seafood Redi-Base
1/2 teaspoon Old Bay Seafood Seasoning
1 teaspoon paprika
1/2 teaspoon Worcestershire sauce
2 tablespoons dry sherry
2 tablespoons heavy cream

1!. Melt butter in saucepan and add flour to form a roux!. Slowly whisk in water and Redi-Base until blended!.
2!. Add old Bay Seasoning, paprika and Worcestershire sauce!. Bring to a boil!.
3!. Remove from heat and add sherry and cream!. Serve!.

Makes 2 1/2 cups!.

Redi-base is a concentrated paste product for things like beef broth, chicken broth etc!.!.!.The flavors are intensified in this form and doesn't contain any water!. The one for newburg sauce is made from northern atlantic white fish!. Perfect for newburg sauce, chowders, etc!.!.!.
