What should I bring to my friends dinner?!


Question: What should I bring to my friends dinner!?
My friend is making a dinner on Friday, and I'd like to bring a soup, salad, or appetizer, but I really don't have the faintest idea what to make!. I'm looking for something not too difficult, but yummy!. It doesnt need to be quick, I've got time, it just needs to be transportable (or quickly baked/cooked there)!. Its gotta have no meat or milk products in it!.

Whats some good type of salads/soups/appetisers/side dishes!? Got any great recipes/ideas!? Most creative dish gets the 10 points!. Thanks guys!.Www@FoodAQ@Com

Vegan Pumpkin Coconut Soup Recipe
INGREDIENTS:

* 1 onion, diced
* 3 tbsp margarine
* 2 cups vegetable broth
* 1 14 ounce can coconut milk
* 1 15 ounce can pumpkin
* 1/2 tsp cumin
* 1/2 tsp curry
* 1/2 tsp ginger
* dash salt

PREPARATION:
In a large pot, sautee the onions in the margarine for 3 to 5 minutes, until onions turn soft!.

Add remaining ingredients and stir to combine!.

Allow to simmer over low heat for at least fifteen minutes, stirring occasionally!.Www@FoodAQ@Com

1 cup dry white wine*
2 tablespoons sugar
Bunch mint leaves
1 teaspoon peppercorns, crushed
1 ripe cantaloupe, chilled

Cherry Tomato Salad With Tarragon

1 1/2 pounds grape or cherry tomatoes, peeled*
2 tablespoons best-quality Balsamic Vinegar
1 1/2 tablespoons Dijon mustard
1/2 cup extra-virgin olive oil
Small bunch tarragon, leaves, chopped
Coarse salt
Freshly ground pepper
1/2 cup pecans, toasted and coarsely chopped**

Red Cabbage and Onion Salad
This is like a healthy version of a Chinese takeaway!.
Ingredients:
1 small red cabbage, finely chopped
1 onion, finely chopped
soya sauce to taste (at least 2 tablespoons)
a good handful of sunflower seeds
Basically, mix all these ingrediants together and enjoy - improves if let sit for a while too!.

Green Summer Leaf Salad
Versatile - using whatever leaves are available to you at the time - you might be surprised by how many leaves are edible!. Lovely as a detoxing lunch on it's own or a more filling meal with a baked potato!.
Ingredients:
half an iceberg lettuce, quite finely chopped
a couple of handfuls of mixed green leaves from the garden (or supermarket!) such as rocket, lambs lettuce, dandelion (young leaves are best), nasturtium (flowers are edible too for a touch of colour!), lovage, parsley!.!.!.
it's lovely just like that but if you want to liven it up a bit add a finely sliced red onion and/or some nice oil (flax, olive, hemp or a mix like Udo's)!. For some more filling ingredients seeds such as pumpkin, sunflower and pine nuts are good!.
Tear or chop the leaves and mix through the lettuce!. Add oil, onions or seeds if using and mix well!.

Wholegrain Rice Salad
Ingredients:
3 cups of cooked wholegrain (brown) rice
2 sticks of celery, diced
1 apple, chopped small
half a cup of cashew nuts
7 or 8 mushrooms, sliced
a handful of parsley, chopped
2 tablespoons cold pressed linseed/flax oil
2 tablespoons cider vinegar
dash of soy sauce

Place all the ingredients in a large bowl and mix until well combined!Www@FoodAQ@Com

It's important that you first check with your friend as to if she wants her guests to bring something!. Then check to see what the menu is going to be so that you can bring a complimentary dish!. So, no milk or meat!? Here are some ideas:

4!. Tempura squash blossoms with dip

7!. Fresh fruit kabobs dipped in pineapple juice and sprinkled with cinnamon!.
8!. Jicama spears dipped in lime juice and sprinkled with chili powder
9!. Beefsteak tomato slices with kosher salt and an oil and vinegar dressing

Queso Fundido (recipe from Bobby Flay, Food Network chef)

1 cup white wine
1/2 pound mozzarella cheese, grated
1/2 pound Monterey Jack, grated
1/2 pound goat cheese crumbled
2 poblano peppers, roasted, peeled, seeded and finely chopped
1/4 pound Spanish chorizo, grilled and finely diced
6 cloves roasted garlic, smashed to a paste
Salt and freshly ground pepper

Bring the wine to a simmer in a double boiler!. Add the mozzarella and Jack cheese and stir until melted!. Add the remaining ingredients and cook for 5 minutes!. Place in a fondue pot and serve with flour tortillas and blue corn chips

Ingredients:
8 oz Cottage cheese-small curd
1/4 c Sour cream
4 oz Shredded sharp cheddar cheese
1/2 c Bisquick
1/4 c Melted butter
3 Eggs
Preheat oven to 350 degrees!. Mix all ingredients with
Electric mixer!. Grease mini-muffin tins or use Teflon ones!.
Fill 3/4 full!. Bake for 15-20 minutes or until brown!.
Hints: Add onion, bacon, mushrooms,etc!. May be frozen!.
Reheat at 300 degrees or microwave for 3 minutes on high!.
Note: These are great! Be sure to add cooked bacon and

Ingredients:
***Roast Beef Rollups:***
4 ounces cream cheese -- softened
1/4 cup minced fresh cilantro or parsley
2 tablespoons minced banana peppers
1 clove garlic -- minced
1/2 pound thinly sliced cooked roast beef

***Ham and Turkey Rollups:***
12 ounces cream cheese -- softened
1/2 cup shredded carrot
1/2 cup shredded zucchini
4 teaspoons dill weed
1/2 pound thinly sliced fully cooked ham
1/2 pound thinly sliced cooked turkey


Directions:

In a bowl, combine cream cheese, cilantro, peppers, and garlic!. Spread about 2 on each slice of beef!. Roll up tightly; wrap in plastic wrap!. In another bowl, combine cream cheese, carrot, zucchini, and dill!. Spread about 2 tablespoons on each slice of ham and turkey!. Roll up tightly; wrap in plastic wrap!. Refrigerate overnight!. Slice into 1 1/2-inch pieces

Black Bean Tortilla Spirals Recipe

Ingredients:
8 ounces cream cheese, softened
1 cup shredded monterey Jack cheese
1 can (4-ounce size) diced chiles
1/2 cup sour cream
1/2 cup chopped green onions
2 cups canned black beans, runsed and drained
6 (10-inch size) flour tortillas


Directions:

Beat cheeses, sour cream and onion in small mixing bowl at medium speed with electric mixer wntil well blended!. Place beans in food processor and blend until smooth!. Spread thin layer of beans onto each tortilla!. Spread cheese mixture over beans!. Roll tortillas up tightly and refrigerate 30 minutes!.
