INGREDIENTS

1 1/2 teaspoons baking powder
1 teaspoon ground ginger
3/4 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon baking soda
1/4 teaspoon dry mustard
1/4 teaspoon salt
1/3 cup packed brown sugar
1 egg, separated
3/4 cup buttermilk
1/4 cup molasses
3 tablespoons butter or margarine, melted
1/3 cup chopped raisins
1/8 teaspoon cream of tartar

DIRECTIONS
In a bowl, combine flour, baking powder, ginger, cinnamon, allspice, baking soda, mustard and salt; set aside!. In a large mixing bowl, beat brown sugar and egg yolk until fluffy!. Add buttermilk, molasses and butter; stir into dry ingredients just until combined!. Add raisins!. In a small bowl, beat egg white and cream of tartar until soft peaks form!. Gently fold into batter!. Bake in a preheated waffle iron according to manufacturer's directions until golden brown!.

***Blueberry Oat Waffles***

INGREDIENTS
2/3 cup all-purpose flour
1/2 cup quick-cooking oats
1 tablespoon brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup milk
1 egg
1/4 cup vegetable oil
1/2 teaspoon lemon juice
1/4 cup ground pecans
1/2 cup fresh blueberries or frozen blueberries

DIRECTIONS
In a mixing bowl, combine the flour, oats, brown sugar, baking powder and salt!. Combine the milk, egg, oil and lemon juice; stir into dry ingredients and mix well!. Fold in pecans and blueberries!. waffle mix
fresh slice strawberries
powdered sugar and whipped cream (not mixed together)
a little cream cheese (about 2/3 of a stick)

Mix the strawberries, chream cheese, and about 3 tablespoons of powdered sugar!. Make about three waffles!. Put one on plate, and spread some of the strawberry mixture onto it!. layer and repeat!. once you spread in between the second and third waffle, poor remainder on top, there shouldn't be too much left, inti a little pile, and add a sprig of mint for color!.Www@FoodAQ@Com

Light Crisp Waffles

A required rest in the oven not only adds to the crispiness of the waffles but, allows you to make a big batch so everyone can eat at once!.

3 1/2 oz!. (3/4 c!.) AP flour
1 oz!. (1/4 c!.) cornstarch
1/2 tsp!. table salt
1/2 tsp!. baking powder
1/4 tsp!. baking soda
3/4 c!. buttermilk
1/4 c!. milk
6 Tbs!. vegetable oil
1 large egg separated
1Tbs!. granulated sugar
1/2 tsp!. vanilla extract

Heat oven to 200 degrees F!. and heat the waffle iron!. Mix the flour cornstarch, salt, baking powder and soda in a medium bowl!. Measure the buttermilk, milk, and oil in a Pyrex measuring cup; mix in the egg yolk and set aside!.
In another bowl, beat the egg white almost to soft peaks!. Sprinkle in the sugar and continue to beat until the peaks are firm and glossy!. Beat in vanilla!.
Pour the buttermilk mixture into the dry ingredients and whisk until just mixed!. Drop the egg white onto the batter in dollops and fold in with a rubber spatula until just incorporated!.
Pour the batter onto the hot waffle iron (1/2 to 2/3 cup depending on your waffle iron) and cook until the waffle is crisp and brown!. (Follow your manufacturers directions for timing then adjust to your liking)!. Set the waffle directly on the oven rack to keep it warm and crisp!. Repeat with remaining batter, holding the waffles in the oven (don't stack them)!. When all the waffles are cooked, serve immediately!.
Serves 5, 8 inch waffles!.
try adding some fresh blue berries or pecans to the batter after pouring onto the iron but before closing the iron!.Www@FoodAQ@Com
