This might not help but I always try new things on my own without a recipe!. mix a little of this and that with my leftovers and add a few things that are not leftovers!. I have a very picky 7 year old and when ever I do that I can get her to try things that she says she doesn't like and she turns out to love them!. With what you have I would take the pork , the onions, the peppers and the garlic put them in my crock pot to make like a por BBQ and use the others in a side dishWww@FoodAQ@Com
wash and slice the courgettes, chop the onion, chop some garlic, clean and chop the peppers,
cut the pork into cubes,
you will need some potatoes as well to make some mash, and a tin of chopped tomatoes!.
right here we go!.!.!.!.!.
add a drop of oil to a large frying pan and add the onion to gently soften, next add the pork and cook for a minute add
the garlic and the courgettes to the same pan ,
cook for a min then add the chopped toms bring back to a simmer then add the peppers, add salt and pepper to taste,
place in a casserole dish put the lid on and place in a low oven!. next make your mash!. when it's made, take the lid off your casserole and cover with mash!. pop back into the oven without the lid this time, at gas mark 4 for 20 mins (optional top with grated chedder)
serve with a dollop of mascarpone!.!.!.!.!.!.enjoy!.
try experimenting by adding your favourite herbs or spices
hope this is of some help!.!.!.!.Www@FoodAQ@Com

That would make a gorgeous stir fry or chow mein - you could just slosh a little soy sauce in and some sherry if you have it for the taste!. Then use the marscapone cheese to make a tirimisu or even mix it with some lime juice and zest to make a nice topping for a cake! Yum!.Www@FoodAQ@Com

This is one that Big Oven came up with:
Pork and Zucchini Stew Ingredients
3 boneless pork chops cut into 3/4-inch cubes 4 cups sliced fresh mushrooms
3 tablespoons flour 2 cans (14 1/2-ounce) stewed tomatoes, undrained
1/2 teaspoon garlic salt 2 medium zucchini halved lengthwise & sliced 1/2-inch thick
1/2 teaspoon pepper 2 teaspoons dried dried basil crushed
1 tablespoon vegetable oil 1 teaspoon dried oregano crushed
1 medium onion chopped 1/3 cup grated Parmesan cheese
1 green pepper chopped
Instructions for Pork and Zucchini Stew
In a plastic or paper bag combine flour, garlic salt and pepper!. Add pork cubes; shake until coated with flour mixture!. Set aside!. In a Dutch oven heat oil over medium-high heat!. Cook and stir onion and green pepper until onion is tender but not brown!. Add pork, cook and stir for 2-3 minutes or until browned!. Stir in mushrooms, tomatoes, zucchini, basil and oregano; bring to boiling, reduce heat, cover and simmer for 10 minutes or until pork is tender, stirring occasionally!. Spoon stew into individual soup bowls!. Sprinkle with Parmesan cheese!.
But I also like to just punch 'using leftovers' or 'cooking with leftovers' or 'leftover ingredients' - variations on a theme! - into Google and see what I come up with!. There's a really good forum called Leftover Tuesdays, and a whole bunch of bloggers post to it - has some great ideas!.
