Question: How do one preserve aubergines(not frozen)!?

Peel and slice aubergine to your liking!. Place into a bowl and salt generously!. Put a weight on top and leave to rest for a couple of days in a cool place!. Drain off any excess water that the salt has drawn from the aubergine and with your hands squeeze out as much water as possible!. Place back in bowl and add vinegar a generous amount but not necessarily drowning in it!. Not really necessary to use a particular kind of vinegar Keep again in a cool place for a couple of days under weights!. Drain off the vinegar, squeeze out excess again and put into a clean bowl!. Add whatever herbs you like, oregano, mint!. Taste for seasoning and add salt if needed, mix well and put into sterilized jars!. Cover with oil and that is it easy peasy! Oh, you can put garlic cloves in as well Very typically Italian with few ingredients but I think the quality of the oil will make a difference here!.Www@FoodAQ@Com

If you really want preservation - as in "use them in 2 months"-preservation, you could pickle them, or make a vegetable chutney (mix with f!.ex!. squash, butternut squash, peppers - would make a delicious, lovely mix of colours!)

Alternatively make Baba Ghannuj (baba ganouish) - an aubergine dip - which will keep for up to 4 days in the fridge - and also freezes well!.

If you mean "preserve" as in just keeping your aubergines for, say, a week before using them, I reccomend bottom of the fridge, in vegetable-zipper-bags (the ones with all the little holes in them)!.Www@FoodAQ@Com

I'm not sure for how long you meant by "preserve", but you can try what my grandmother used to do:
1!. Cut the aubergines into thick slices and lightly salt them!.
2!. Leave the salted slices for about 30 minutes for the salt to do its work!. Rinse, then pat them dry, brush with olive oil and roast until just done!.
3!. Leave the roasted slices to cool, them pack them into a jar and cover with more olive oil!.
The aubergines should keep for about 3 months in a cool place!.Www@FoodAQ@Com

I would roast them first and add to a sterile jar and add olive oil to it!.
