For salmon, I make a sauce that is one part teriyaki sauce and one part spicy mustard!. I usually marinade the thawed salmon it this, then also use the marinade to baste it during cooking!. While that is cooking, I may also 'flower' some onions!. Peel two or three medium onions, and cut in half north to south!. Spread the 'leaves' outward and drizzle with EVOO, salt and pepper, sometimes Old Bay seasoning!. Stick them in the oven with the salmon, even on the same tray or dish!. They will open when cooked and begin to look like onion flowers!.
For a side with the salmon, I usually get some fresh broccoli or asparagus and steam them just enough that they are crunchy still and really green, and sprinkle some lemon pepper over them and maybe a smear of butter!. Another side I found that goes well with the salmon and teriyaki/mustard glaze is a baked sweet potato!. You can even microwave these like a baking potato, and melt some butter and add cinnamon sugar mix to the butter or just sprinkle some cinnamon sugar on top!. WOW!Www@FoodAQ@Com
