mocha cheesecake - this one's THE BEST! I love this recipe and would give it a 10/10!.
Here's the recipe in case you want it:
Ingredients:
6 squares (oz!.) semisweet chocolate
1 1/2 lb!. cream cheese
1/2 cup granulated sugar
2 large eggs
1 cup heavy cream
1/2 cup double-strength coffee
1 teaspoon vanilla extract

Directions:
Preheat oven to 350!. Melt chocolate!. Meanwhile, in large bowel, beat together cream cheese and sugar until light!. Add eggs, one at a time, beating thoroughly after each!. Beat in cream!. Pour melted chocolate slowly into cheese mixture and add coffee & vanilla!. Mix to blend thoroughly!. Pour mixture into prepared crust & bake for about 45 minutes or until edges of cake are puffed up slightly!. Cool in oven with door cracked open, then cool to room temperature!. Chill!.

It's great with a basic graham cracker crumb crust - 1 1/2 cups graham cracker crumbs, 6 tablespoons melted butter, 1/4 cup granulated sugar - place crumbs in mixing bowl, add butter & sugar and blend well!. Press into sides of springform pan, then add cheesecake batter!.Www@FoodAQ@Com

Oh, I love Cheesecake too! I prefer the creamier Cheesecakes as apposed to the Heavier ones though!. But, I wouldn't turn away from either one! When I'm confused about which flavor I want, I make a plain one, then build myself a little topping buffet with whatever I have around the house, but I will admit to being a BERRY fan, whatever's in season and on sale, or frozen cooked with sugar and flavored Liquor! My favs are:
Wild Berry
Chocolate Caramel
Heath Bar Crunch/Toffee
White Chocolate Butterscotch

Chocolate-Raspberry Truffle Cheesecake

2 1/2 c!. chocolate wafer crumbs
1/3 c!. butter, melted
1/2 cup sugar
8 oz!. pkg!. semisweet chocolate squares, cut into 1/2" cubes
1/4 c!. hot strong coffee
3 (8 oz) pkg!. cream cheese, cut into 1" cubes
8 oz!. carton sour cream
1 c!. sugar, divided
2 eggs
2 T!. whipping cream
1 tsp!. vanilla extract
1/4 cup Chambord or other raspberry-flavored liqueur

Garnish:
Whipped cream
Fresh mint sprigs

Raspberry Sauce:
10 oz!. pkg!. frozen raspberries, thawed
2 tsp!. cornstarch

Cheesecake: Combine wafer crumbs, butter, and 1/2 c!. sugar; blend well!. Press on bottom and 1 1/2" up sides of a 9" springform pan!. Set aside!.

Position knife blade in food processor bowl; add chocolate cubes, and process until finely ground!. With food processor running, pour hot coffee through food chute!. Process until chocolate is melted and smooth!. Add cream cheese cubes and next 6 ingredients, and process until mixture is smooth, stopping once to scrape down sides of processor bowl!. Pour mixture into prepared crust, and bake at 350F for 55 minutes!. (Center will still be soft!.) Let cheesecake cool to room temperature on a wire rack!. Cover and chill at least 8 hours!. Carefully remove sides of pan!. Place each serving on a pool of Raspberry Sauce!. Garnish, if desired, with whipped cream and mint!.

Raspberry Sauce: Drain raspberries, reserving juice!. Put raspberries through a food mill, and discard seeds!. Combine raspberry juice, puree, and cornstarch, stirring until smooth!. Cook over medium heat, stirring until smooth and thickened!. Let cool!. Yield: 3/4 c!.Www@FoodAQ@Com

My favourite is to put cherry pie filling on top of regular cheesecake, so decadent!. Almonds taste really good with the cherry pie filling too!. Or you can melt a couple squares of chocolate and mix it in with the batter, and shave a little chocolate to spring on top after it's done baking and coolingWww@FoodAQ@Com

I made my first real cheesecake a couple of weeks ago!. I think I was a little overambitious though, for my first attempt!. I tried a chocolate-swirl cheesecake; not bad, but not great either!. I think next time I'll just make a plain cheesecake and try different toppings!.Www@FoodAQ@Com
