***Tater-Tot Casserole***

INGREDIENTS
1 pound ground beef
1 pinch garlic powder
salt and pepper to taste
1 (32 ounce) package tater tots, thawed
1 (10!.75 ounce) can condensed cream of mushroom soup
1 (10!.75 ounce) can condensed cream of celery soup
1 (10!.75 ounce) can milk
1 pinch garlic powder

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C)!.
Crumble hamburger into a 9x13 inch baking pan!. Sprinkle meat with garlic powder, salt and pepper!. Cover the hamburger with tater tots!.
In a bowl, stir together mushroom soup, celery soup and milk!. Pour the soup mixture over the potatoes and hamburger and sprinkle with additional garlic powder!.
Bake in preheated oven for 60 minutes!.

***Ground Beef Stroganoff***

1 pound ground beef
1/2 cup chopped onion
1 (4!.5 ounce) can mushrooms, drained
1/2 teaspoon garlic powder
1/2 teaspoon mustard powder
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup beef broth
1 (16 ounce) package wide egg noodles

DIRECTIONS
Break up ground meat into a large skillet, and add onion, mushrooms, garlic powder, and mustard powder!. Cook and stir over medium heat until the meat is browned and onion is tender!. Drain off excess fat!.
In a small bowl, combine sour cream, mayonnaise, and beef broth!. Stir into beef mixture, and cook over low heat for 10 to 15 minutes!. Do not stir too much!.
Meanwhile, cook pasta in a large pot of boiling water until done!. Drain!. Serve sauce over hot noodles!.Www@FoodAQ@Com

Mince can be quite versatile and challenging! Apart from spaghetti bolognese, lasagne, cottage pie or just plain mince try the following:

Mix with diced vegetables, herbs and seasoning, wrap in pastry!.

Add finely chopped onion and garlic, herbs, seasoning, a little flour or oats and water to bind it all together, roll into sausage or round shapes and fry or bake!.

Mix it with some cheap liver, oats, herbs and seasoning and make a meat loaf!. You don't have to add the liver, but it makes a change from just mince, plus the loaf can be hot or cold!.Www@FoodAQ@Com

Greek Meatballs!. - you'll need a large saute pan/frying pan with a lid!.

500G lamb mince
grated rind of 1 lemon
tablespoon chopped parsley
1 teaspoon chopped mint
1 oz breadcrumbs
season with salt and pepper

squeeze together until smooth and form into walnut sized balls!.

Put to one side and make the sauce:

2 onions finely chopped, soften in a large saute pan for about 5 mins!.
Add 2 cans of chopped tomatoes, a pinch of ground coriander, a pinch of dried oregano and a teaspoon of sugar!.
Slowly bring to the boil then add the meatballs to the pan!. Cover with the lid and turn the heat down to a slow boil/simmer!.
Cook for 35 to 40 mins, turning after 15 mins, once or twice to stop sauce sticking!.

Serve with boiled rice and a green salad

i cook with mince loads as you said,it's so cheap and versatile,i could write a book of recipes to do with mince but I'll give you 1 ,get tortillas,on the base of a roasting tray put a whole tin of chopped tomatoes,in each of the tortillas,put in couple of spoonfuls of chili,wrap them and place tightly on top of the tomatoes,pour a tin of kidney beans or re fried beans on top,another tin of chopped tomatoes and plenty of cheese and bung in the oven till the cheese is melted!.!.this is lovely served with sour cream,guacamole and a side portion of nachosWww@FoodAQ@Com

Stuffed aubergines!. Dry fry the mince with one finely chopped onion!. Wash aubergines, cut in two lengthwise and scoop out the flesh, (leaving a layer of flesh on the skins), which you then chop into small pieces!. Add the flesh to the mince, add a small can concentrated tomato, salt, pepper, some finely chopped garlic, some dried basil!. You can also add some chopped canned tomatoes or fresh tomatoes!. Cook this mixture until it's done, then fill the aubergine skins!. Put into an oven dish, with just a spoonfull of olive oil in the dish!. cover with foil to allow the dish to cook without burning!. Hot oven, around 45 minutes or so!. towards the end, take off the foil, add some grated cheese, (optional),

'mainstay' mince


Makes 2kg



Preparation time 30 mins to 1 hour

Cooking time over 2 hours






Ingredients
225g/8oz streaky bacon, diced
175-200ml/6-7fl oz good olive oil
2 onions, finely diced
2 sticks celery, peeled and finely diced
2 carrots, peeled and finely sliced
5 cloves garlic, peeled and crushed with a little salt
2 tsp fresh soft thyme leaves
2 bay leaves
2 tsp dried oregano
2 x 400g/14oz cans chopped tomatoes
2 tbsp tomato purée
1 tbsp anchovy essence
2 tbsp Worcestershire sauce
1!.8kg/4lb minced beef
250g/9oz fresh chicken livers, finely chopped
2 bottles dry red wine
1!.7 litres/3 pints chicken, beef or lamb stock
salt and freshly ground black pepper



Method
1!. In a large heavy-based saucepan, fry the bacon in two tablespoons of olive oil!. When the bacon is crisp and has released some natural fats, add the onions, celery, carrots, garlic, thyme, bay leaves and oregano and cook over a medium heat until the vegetables have softened and taken on a little colour!. Add the tinned tomatoes, tomato purée, anchovy essence and Worcestershire sauce!. Stir to combine!.
2!. Meanwhile, in a large frying pan, heat a little olive oil and fry off the mince in small batches until browned!. While the meat is frying, break up any lumps with the back of a wooden spoon!. Remove the cooked meat from the pan and repeat, using more oil each time if necessary, until all the meat is used up!. After each batch, add the meat to the sauce mix!.
3!. In the same frying pan, fry the chicken livers until brown and crusty (in a little more olive oil) and add the livers to the meat!. Deglaze the frying pan with some of the red wine, scraping any crusty bits from the bottom, then pour this wine, the remaining wine and the stock into the meat pot!.
4!. Bring to the boil, reduce the heat and simmer, stirring from time to time, for about two hours!. Season to taste!. If the liquid reduces too much, top up with water!. When the meat is tender, allow to cool, then refrigerate!. When cold, lift off the solidified fat and discard!. Freeze the mixture in small batches and use for stuffed tomatoes, bolognese, cannelloni, shepherd's pie, moussaka or lasagne!.Www@FoodAQ@Com

Mock Filet Mignon

1 1/2 pounds ground beef
1 small onion, chopped
1/4 cup minced parsley
3 Tablespoons bread crumbs
1 egg, lightly beaten
1 Tablespoon milk
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 slices bacon, halved lengthwise

2 Tablespoons butter
1/4 pound mushrooms
3 scallions, chopped
1 clove garlic, minced
3/4 cup beef broth
2 teaspoons cornstarch

Position a rack 3"-4" from heat source; preheat broiler!. Combine first 8 ingredients!. Divide into 6 balls, form patties, about 1" thick!. Wrap outer edge of each patty with one piece of bacon; secure ends with a toothpick!. Place patties on rack set in roasting pan; broil, turning once, 15-18 minutes for medium!. In a skillet melt butter over low heat!. Add mushrooms, scallions and garlic; cook until mushrooms soften, about 10 minutes!. Add 1/2 cup broth!. Stir together remaining broth and cornstarch; add to skillet!. Bring to a boil!. Cook until thickened, 3-4 minutes!. Remove toothpicks; serve sauce over patties!.Www@FoodAQ@Com

Another recipe my mum used to always make, I don't know what to call it but here is the recipe!!

Make a cheese sauce up and put to one side
brown some mince with a bit of chopped onion - add a bit of gravy mix!.
Slice some potatoes, not too thick, not too thin!.

layer all the ingredients in a bowl with a layer of the cheese sauce on the top and put in the oven until the potatoes are cooked, I suppose it's a bit like a lasagne but with potato not pasta sheets, I dunno, it's lovely though!Www@FoodAQ@Com

Try these recipes

*Linguine with Fresh Tomato Sauce

2 cups seeded, and coarsely chopped tomato
1/2 cup extra virgin olive oil
1 cup firmly packed fresh basil leaves, minced
1 cup firmly packed fresh parsley leaves, minced
3 tablespoons freshly grated Parmesan
3 garlic cloves, or to taste, minced
2 teaspoons salt
1 pound linguine
Fresh parsley to garnish

Make tomato sauce:
In a bowl combine well all the sauce ingredients and let the sauce stand at room temperature, covered, for at least 1 hour!.
In large pot, bring 5 quarts of salted water to a boil!. Add linguine and stir to prevent sticking!. Return water to boil and cook until pasta is firm but cooked, approximately 7 to 10 minutes, stirring occasionally!. Drain pasta well!. Serve with tomato sauce, and garnish with fresh parsley!.

*Adobe Chicken

2 Tbsp!. sugar
1 tsp!. pepper
? c!. soy sauce
? c!. white vinegar
1 Tbsp heaping minced garlic
4 boneless chicken breasts

Mix first 4 ingredients well, put into frying pan!. Heat well, and add chicken breasts!. Cover and cook until no longer pink (approximately 20-25 minutes)!. Meanwhile, prepare Minute Rice as directed on package!. Pour sauce from chicken over rice and serve!.

*Mince

2 pounds ground beef
1/8 pound onions chopped
3 ounces flour, all-purpose
30 2/3 ounces tomatoes, canned crushed
1/8 ounce mace ground
1/8 ounce salt
1/8 teaspoon black pepper

Cook beef with onions in its own fat until beef loses its pink colour, stirring to break apart!.
Drain or skim off excess fat!.
Sprinkle flour over beef; continue cooking until flour is absorbed!.
Add tomatoes, mace, salt and pepper!.
Stir well!.

*Savoury Mince:

500g beef mince
1 tsp curry powder
1/2 cup long grain rice
1 tin tomato soup
1 large onion chopped
1 1/2 cups grated carrot
2 cups beef stock
1 cup frozen peas

Fry the onion in a little oil then add the mince and brown!. Add the rest of ingredients and simmer with no lid until all the liquid is absorbed!.

*Mince and Tatties

Brown your mince!. Drain the fat off it!. Fry some chopped onions and carrots in some olive oil!. Add the browned beef and 1/2 pint of beef stock (oxo cube)!. Simmer for at least 15 minutes or until the carrots are tender!.

Peel your potatoes, cut them into cubes so they cook faster!. Add salt and cold water!. Bring to the boil!. Once at the boil, boil for 20 minutes or until soft (don't let them go through the bree - Scottish term)!. Drain, add a large knob of butter and some milk and salt and pepper!. Mash with a mouli or with a potato masher!.

Microwave some frozen peas for the side!. Serve!.

*Ground Mince Wraps

350g lean beef or lamb mince
1 Tbsp olive oil
1 onion, peeled and finely chopped
1 Tbsp tomato paste
1 x 375g jar salsa (mild, medium or hot)
? x 400g tin Mexican-spiced tomatoes
1 x 450g tin refried beans
6-8 soft flour tortillas
1 cup grated edam cheese

Heat oil in a pan and cook the onion for 1-2 mins, then add the mince, stirring until browned!. Drain off excess liquid and add tomato paste, salsa and tomatoes and simmer gently a further 20 mins!.
Allow to cool and mix in the beans!. Divide the mince between the tortillas and sprinkle with grated cheese!.
Fold the bottom over the mince, roll up tightly sideways and secure with a toothpick!.
Grill in a preheated oven until hot through!. Serve with seasonal vegetables or a green salad!.

*Mince Volauvents

2 X Frozen Volauvents
3/4 lbs Round/ground mince
4 X Chopped up & cooked carrots
1/2 tbl spoon corn flour
1 small tin sweetcorn
1 Tin minestrone soup
1 Clove of garlic
1 tbl spoon Soy Sauce
Coarse Black Pepper
Salt
Herbs and Spices

Add mince to pot with a small amount of cooking oil at the bottom
Break it up and cook on low heat till brown (keep turning)
Baste rim volauvents with egg or milk!.
Place them on a baking tray and add to pre-heated oven (200c/390f)
Add herbs to mince while browning (to taste) e!.g!. Oregano, Mixed Herbs, Basil
Crush clove of garlic and stir into mince
Add Soy Sauce and stir into mince
Add sprinkling of black pepper and stir into mince
Add sprinkling of salt and stir into mince
Add tin of minestrone and stir into mince
Add corn flour to 1/2 cup of cold water and stir till dissolved!. Add this to the mince!.
Add tin of sweetcorn and stir into mixture!.
Add cooked carrots and stir into mixture!.
When volauvents are golden brown put onto separate plates and remove the centre!.
Add mince mix to centre of volauvents till desired amount of mince is on the plate!.
Put the removed centre of the voluvents back on top of the volauvents!.
Serve with choice of sides (mashed potatoes, green beans etc)
