this is so deliciously light, it is truly amazing!. quite different yet still very easy to prepare (if you have a mandolin!!)Www@FoodAQ@Com

Marinated Avocado-Mushroom Salad

? cup salad oil
? cup dry white wine
2 tablespoons vinegar
1 tablespoon snipped parsley
? teaspoon sugar
? teaspoon salt
? teaspoon dried basil, crushed
1 medium avocado, seeded, peeled & sliced
1 cup sliced fresh mushrooms
2 thin slices onion, separate into rings
3 cherry tomatoes, quartered
Bibb lettuce

To make dressing, in a screw-top jar, combine oil, wine, vinegar, parsley, sugar, salt & basil!. Pour dressing over avocado, mushrooms, onion rings & cherry tomatoes in a shallow dish!. Cover & chill for 2 to 3 hours; occasionally spoon dressing over the vegetables!. Drain vegetable mixture!. Arrange vegetables on Bibb lettuce leaves!. Makes 4 servings!.

(NOTE: I often add some chopped cucumber to this too!. I serve on individual salad plates with one or two leaves of lettuce…I prefer Butter lettuce!. It is very pretty and tasty too!)

Salad whatever but w!./either ITALIAN DRESSING, BLUE CHEESE DRESSING, or RANCH DRESSING!.

also, if you've never tired dipping 'za into a dab (ok, "dollop!!!" of Thousand Island Dressing then you're in for a big treat! (just try it!!)!.Www@FoodAQ@Com

Grape tomatoes, halved (orange and red, or just one or the other), croutons, raspberry-cranberry vinagreitte, or just raspberry, baby spinach, collard greens, shredded parmesan and mozzerela cheese, and for some crunch, you can add some croutons!.Www@FoodAQ@Com

You could go with a traditional Caesar salad with romaine lettuce, Parmesan cheese and crouton's (anchovies too if you like them:)
Or even a simple garden salad!. Something light and refreshing would definitely work!.Www@FoodAQ@Com
