What is your opinion of the recipes in Rachel Ray's cookbooks!? Are the practical or impractical!?Www@FoodAQ@Com


Answers:
She has a staff that does all of the prep work!. The buying of ingredients, chopping and organizing into the kitchen prior to her even getting in the kitchen!. Then they write down for her the exact minute and what she should have done in that time to accomplish the 30 min!. meal!.
I think that she twists most recipes and very few actually have good results and are impractical!. Namely the size of the ingredients she adds to her dishes!. The chunks are HUGE and I don't mean the servings and then on top of all that she wastes a lot of product!. If I could afford to hack away at most of the product and toss it; I would be done in 30 mins!. too!.
I for one don't care for her recipes!. However, she seems like a very nice person and she has a great smile!. What I love most about her recipes are the little phrases she coins!. Other than that, I don't care for her methods and recipes!.Www@FoodAQ@Com

I'm not sure what question DJ is answering, but I think RR's recipes are practical!. I'm not sure we are all that organized and efficient to be able to make them!. It seems she has a lot of "help" in the studio and in the editorial staff, but her ideas and style are manageable!. I like her show, but have a hard time with her voice and the constant perkiness!.Www@FoodAQ@Com

Salmon Cakes
2 14-ounce cans salmon with bones, drained
2 egg whites, beaten
1/3 cup Italian bread crumbs (a couple of handfuls)
1 tablespoon Old Bay seasoning
A few drops of hot sauce, such as Tabasco
2 tablespoons flat-leaf parsley, chopped
3-4 tablespoons roasted red pepper from a jar, drained and chopped
Salt and freshly ground black pepper, to taste
1 tablespoon vegetable oil (once around the pan)

PreparationPreheat oven to 375°F

Heat a medium-sized ovenproof skillet over medium-high heat (if you don’t have an ovenproof skillet, wrap the handle tightly in aluminum foil)!. Combine salmon, egg whites, bread crumbs, Old Bay, Tabasco, parsley, roasted red pepper, salt and pepper!. Form mixture into 4 patties, 1 inch thick!. Pour vegetable oil into hot pan!. Add patties and cook 1-2 minutes on each side, then transfer to oven and bake for about 8 minutes
Rachael's Chimichurri Chicken Bites
rounded tablespoon sweet paprika
3/4 cup flat-leaf parsley leaves, a couple of handfuls
3 tablespoons fresh oregano leaves
3 tablespoons fresh thyme leaves
2 bay leaves, crumbled
1/2 small white onion, coarsely chopped
3 cloves garlic
1 teaspoon cayenne
1 cup extra-virgin olive oil, eyeball it
1/4 cup red wine vinegar, 3 splashes
1 teaspoon coarse salt
1 1/2 to 1 3/4 pounds chicken tenders
PreparationPreheat a grill pan over high heat!.

In a food processor combine paprika, parsley, oregano, thyme, bay leaves, onion, garlic and cayenne!. Finely chop the mixture by pulsing!.

Heat oil in a small pan over medium low heat!. When oil is warm, stir herb and garlic mixture into oil and heat 3 to 5 minutes, then remove from heat!. The oil will become infused with the flavor of the herbs and garlic!. Transfer to a bowl and stir in vinegar and salt!. Taste to adjust seasonings!.

Cut chicken tenders into thirds and place in a shallow dish!. Wash hands!.

Spoon half of your chimichurri over the chicken and coat completely and evenly!. Using tongs, transfer the bites to the hot grill and cook 2 or 3 minutes on each side!. Transfer bites to a serving plate!. Serve with party picks and reserved chimichurri sauce for dipping!.Www@FoodAQ@Com

She's OK if you are really new to cooking as she doesn't use a lot of complicated terminology and methods!.
I have never cared for her personally and certainly don't think of her as a 'chef'!. She's very commercial and fits in a lot of ingredients that she is promoting by her sponsors and the few times I have watched her, they don't work out very well!.
I'm sure her dishes are safe, and if you followed her directions you probably couldn't screw it up too bad!.
She doesn't impress me though as someone who really knows a lot about real cooking!. I don't care if she grew up in a restaurant family, she doesn't seem like she has picked up much!.Www@FoodAQ@Com

I think she does very practical meals!.!.!.for 30 minutes!.!.!.Her angle is to get everyday people who feel overwhelmed about cooking a meal back in the kitchen!.instead of on the line for drive-thru!.!.!.!.you have to appreciate that!.!.!.she never claimed to be a chef!.!.!.!.a cook!.!.!.as am I!.!.!.So many families these days don't spend time in the kitchen or even with one another!.!.!.!.!.!.!.!.!.I would definitely recommend her cook books!.!.!.for the kitchen novice !.!.!.they are a treasure!.my opinionWww@FoodAQ@Com

It all depends on your cooking skills!. I highly recommend them if you are a newbie!. I also find them handy for when I am traveling and don't always have fresh ingredients!. I like looking through them just to get ideas sometimes and change it up a bit have been cooking for a while but some days I just have no clue what to cook!.!.Www@FoodAQ@Com
