Question: Anyone got a recipe for welsh rarebit!?!?!?
Answers:
1oz butter
i teaspoon made mustard
half teaspoon salt & pepper mix
2 tablespoons white breadcrumbs
1 egg yolk
4oz strong cheddar cheese grated
3 tablespoons beer

melt butter in saucepan,add mustard,salt & pepper & breadcrumbs,stir over gentle heat,add egg yolk,mix in, then cheese,stir to melt,add beer,mix in,spread on hot buttered toast!. enough for 3 slices!.NEVER let mixture boil or it will go stringy,must be a very gentle heat!.

Welsh rarebit

Cooking time 10 to 30 mins







Ingredients
75ml/2?fl oz milk
325g/11?oz strong cheddar
30g/1?oz plain flour
1 egg yolk
1 whole egg
? tsp mustard powder, or to taste
25g/1oz fresh white breadcrumbs
dash of Worcestershire sauce
dash of Tabasco sauce
salt and freshly ground black pepper
2 slices thick white bread, toasted
tomato chutney, to serve
Variation
handful of spinach
1 tomato, sliced



Method
1!. Place the milk on the stove to warm through!. Do not boil!.
2!. Grate the cheese, add to the pan with the milk and gently dissolve!.
3!. Add the flour and cook for a minute!. Remove from the heat and cool!.
4!. Add the egg and yolk, mustard, breadcrumbs and a dash of Worcestershire and Tabasco sauce!. Season and allow to cool!.
5!. Grill the bread on both sides and place into a dish!. Top with the rarebit mixture and place under the grill to brown!.
6!. After a couple of minutes, add the spinach and sliced tomatoes!. Put back under the grill!.
7!. Remove and serve with the chutney!.Www@FoodAQ@Com

2 tablespoons unsalted butter
2 tablespoons all-purpose flour

1 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup porter beer
3/4 cup heavy cream
6 ounces (approximately 1 1/2 cups) shredded Cheddar
2 drops hot sauce
4 slices toasted rye bread

In a medium saucepan over low heat, melt the butter and whisk in the flour!. Cook, whisking constantly for 2 to 3 minutes, being careful not to brown the flour!. Whisk in mustard, Worcestershire sauce, salt, and pepper until smooth!. Add beer and whisk to combine!. Pour in cream and whisk until well combined and smooth!. Gradually add cheese, stirring constantly, until cheese melts and sauce is smooth; this will take 4 to 5 minutes!. Add hot sauce!. Pour over toast and serve immediately!.Www@FoodAQ@Com

What I've always done is make like a really thick cheese sauce by melting butter in a pan, then mixing in flour to make it into a sorta ball, then add milk slowly and it will start to make a white sauce!. You then add mustard (or mustard powder) and some pepper, then melt in some grated cheese!. When it is thick enough don't out any more cheese in! Toast some bread, put the thick sauce on it then grill it til it starts going brown!.!.!.lovely!!! I think 'real' welsh rarebit has some sort of beer in it but I don't like it!!!Www@FoodAQ@Com
