Question: Could I make cupcakes in advance and freeze them!?
I have a bake sale in 1 week 5-2, could I get a head start and bake a bunch of cupcakes this weekeend and freez them!? Would they be ok!?!?!?!?!?Www@FoodAQ@Com

Freezing them will actually lock in some of the moisture so that when you take them out they will be moist!. I like them better if they have been frozen, personal preference, I guess!. I agree with the first lady, don't frost them until they come out and make sure that they are stored properly to prevent freezer burn!.Www@FoodAQ@Com

Yes!.!.!.!. This recipe makes 3 dozen (most recipes only make 2 doz) and freezes really well!. Sprinkle them with powdered sugar after you thaw them out!.!.!. They're different because they have a creamy, chocolate chip filling!.!.!.!.

LIDO 14 CUPCAKES
3 c!. flour
2 c!. sugar
1/2 c!. cocoa powder
2 tsp!. baking soda
1 tsp!. salt
3/4 c!. oil
2 tsp!. vanilla
2 c!. water
2 Tb!. vinegar
powdered sugar (to sprinkle on top)
FILLING:
1 8-oz!. package softened cream cheese
1 egg
1/2 c!. sugar
1/4 tsp!. salt
1 (6 oz) pkg!. chocolate chips
Stir together flour, sugar, cocoa, soda & salt with a wire whisk!. Add remaining ingredients and stir!. Combine filling ingredients in another bowl!. Fill 36 cupcake papers half-full of cake mixture!. Add a large teaspoonful of filling; fill remainder of cupcake with batter!. Bake at 350 for 30 min!. Sprinkle tops with powdered sugar when cool (FREEZE WELL)Www@FoodAQ@Com

Yes, freezing them is fine!. As others said, make sure they're in a good container so they don't have freezerburn!. also, make sure you allow them to thaw completely before you frost them (don't frost before freezing) - the frosting will stick better once they have thawed!.Www@FoodAQ@Com

Yes you can freeze them, I always do in Ziploc freezer bags!. Just make sure when you thaw them, you remove them from the bags, or otherwise the tops will get a bit "gummy"!. also, don't freeze them with any type of icing or frosting on them!.Www@FoodAQ@Com
