Chicken Parmesan!.
Ingredients:
4 boneless, skinless Chicken breast halves
2 Eggs, beaten
1 cup Italian Bread Crumbs
1/4 cup Olive Oil
1 jar Spaghetti Sauce (15-1/2 oz!.)
1/2 cup grated Parmesan Cheese
1 cup (4 oz!.) shredded Mozzarella Cheese
Method
Preheat oven to 400!. Dip chicken into eggs and into bread crumbs!. Heat olive oil!. Cook chicken in oil until well browned on both sides!. Pour spaghetti sauce into 11x7" baking dish!. Place chicken on sauce and top with cheeses!. Bake 15 minutes or until cheese is melted and lightly browned!.

Notes: If you have extra time, you might flatten the chicken breast before preparing!.


STEAK & VEGETABLE CASSEROLE
2 - 3 lb!. round steak, cut into serving pieces
2 tbsp!. salad oil
2 lg!. onions, sliced
2 c!. each sliced carrots and sliced fresh mushrooms
1 med!. size green pepper, sliced
1/2 lb!. fresh green beans, cut into pieces
3 tomatoes, sliced
1/2 c!. uncooked regular rice
2 tsp!. salt
1 1/2 tsp!. sweet basil
Oregano
1/4 tsp!. freshly ground black pepper
1 c!. shredded cheddar cheese
Brown the meat in the oil in a large frying pan!. Arrange 1/3 of the sliced vegetables in a 4 quart casserole!. Place 1/2 of the meat pieces over these vegetables and sprinkle with 1/3 of the rice and seasonings!. Add another 1/3 of the sliced vegetables, the remaining meat, 1/3 of the seasonings and all the remaining rice!. Top with remaining sliced vegetables and seasonings!. Cover and bake at 350 degrees for 1 1/2 hours or until meat is tender!. Remove cover, sprinkle with cheese and return to oven to melt!.Www@FoodAQ@Com

CHICKEN NUGGETS WITH HONEY MUSTARD
SAUCE

8 oz!. chicken breast halves, skinned, boned and cut into bite sized pieces
1 tbsp!. olive oil
1 clove garlic, minced
3/4 c!. bread crumbs, finely ground
1/4 tsp!. each garlic and onion powder
1/8 tsp!. ground pepper
1/8 tsp!. cayenne pepper
1 egg mixed with 1/2 tsp chicken bouillon

SAUCE:

1 tbsp!. Dijon mustard
1 1/2 tsp!. honey

Preheat oven to 475 degrees!.
Beat egg and mix with chicken bouillon!.

Combine chicken, olive oil, garlic and ground pepper!. Marinate 30 minutes!.

Combine bread crumbs and seasonings in shallow dish!. Dip chicken in egg and rol in breadcrumb mixture; place on large cookie sheet!. Spray with olive oil!.

Bake 15 minutes!.

Meanwhile, combine honey with mustard!.

To serve, dip nuggets into sauce!.

CHICKEN WITH CASHEWS

1 pound chicken breast, boned & sliced thin
2 tablespoons soy sauce
1 tablespoon cornstarch
4 tablespoons oil
1/2 teaspoon salt
1 small chopped onion
1/2 pound mushroom, trimmed and sliced
1 small cabbage head, shredded
1 teaspoon sugar
2 cups cashews
1 teaspoon cornstarch
1/4 cup soy sauce
3 ounces Chinese noodles

Place chicken, 2 tablespoons soy sauce and 1 tablespoon cornstarch in a bowl; let stand for 15 minutes!. Heat 2 tablespoons oil with salt in wok or heavy skillet over high heat!. Add chicken and stir-fry until white and firm!. Add onion and mushrooms and stir-fry until vegetables are soft!.
Remove from pan!.

Add 2 tablespoons oil to wok!. Stir in cabbage and sugar!. Stir-fry 3 or 4 minutes until cabbage is crisp tender!. Return chicken-vegetable mixture to wok!. Add cashews and toss to combine!. Add 1 teaspoon cornstarch to 1/4 cup soy sauce!. Stir into chicken-cashew mixture!. Cover and steam 1 minute!. Uncover and stir until sauce is slightly thickened!. Sprinkle with Chinese fried noodles before serving!. Makes 4 to 6 servings!.

PEPPER STEAK STIR FRY

1 1/2 inch thick beef steak, any kind (16-24 oz)
2-3 bell peppers, any color
2 large yellow onions, thinly sliced
1/2 hot pepper (depending upon heat desired)
2-3 tablespoons extra virgin olive oil
1 tablespoon butter
4-5 cloves garlic
1/2 lb mushrooms, thinly sliced
1 tablespoon Wondra (or other flour)
3 tablespoons red wine
1 bouillon cube or teaspoon of beef flavored soup base (optional)
salt or soy sauce (if desired)
pinch of red pepper flakes, to taste

Slice uncooked steak into thin slices across the grain!.
Tip: Place steak in freezer until partially frozen but the tip of a sharp knife can still pierce it 3/8" deep!. This makes it easier to slice!.

Prepare vegetables: Core and slice peppers, peel onions and thinly slice, peel garlic!. Clean mushrooms and slice!.

In a skillet, melt butter in oil!. Add onions and saute over medium high heat until edges take on light brown color!. Add whole garlic cloves and sliced peppers!. When garlic cloves have a slightly roasted appearance, mash the garlic into the oil using the tines of a fork!. Remove sauteed vegetables to a dish using a slotted spoon when tender, and lightly browned on edges but not soft!.

Turn heat to high and brown steak; add mushrooms after several minutes!. Remove steak to vegetable dish when tender!. Add wine, flour, and bouillon, scraping pan to add flavor and color to gravy!. Reduce heat to very low and simmer gravy ten minutes!. Add a few tablespoons of water or broth if gravy is too thick; add more flour if gravy is too thin after several minutes!. Add vegetables and steak to gravy and heat through!. Season to taste with salt (or soy sauce), pepper and hot pepper, to taste!.

Serve as is, or over rice or chow mein noodles, or in sub sandwiches topped with caramelized onions!. Season with soy sauce, if desired!.

Variation: Prepare using pork loin instead of beef steak; substitute Nappa cabbage for peppers!. Add finely minced fresh ginger, if desired!.Www@FoodAQ@Com

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c!. sour cream
2 c!. cooked minute rice (1 c!. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up!. Place chicken in casserole dish!. Mix together remaining ingredients!. Pour mixed ingredients over chicken!. Top with crushed Ritz crackers; dot with butter!. Bake at 350F!. for 45 mins!.

Quick and Easy Mexican Chicken Casserole:

1 packet flour tortillas
1 cup Ro-Tel tomatoes and onions
1 fryer chicken
1 cup cream of chicken soup
1 cup cream of mushroom soup
1 onion, chopped
1 teaspoon garlic salt
1 teaspoon chili powder
1/2 lb cheddar cheese

1!. Broil chicken until tender!.
2!. Remove, reserving broth!.
3!. Remove skin and ones from chicken and cut into bite sized pieces!.
4!. Grate Cheese and mash Tomatoes!.
5!. Combine chicken, Onions, Cheese, Garlic Salt, Chili powder and Tomatoes!.
6!. Drop tortillas into boiling chicken broth until softened!.
7!. Line large baking dish with softened tortillas!.
8!. Add chicken mixture!.
9!. Pour the 2 cans of soup over the chicken!.
10!. Bake at 350 degrees for 35 minutes or until bubbly and hot!.

season the cubed steaks with seasoned salt, garlic powder, and black pepper!.
dredge the meat in flour and pan fry them in a lightly oiled skillet and brown the steaks on both sides!.
after the steak is browned, remove the meat from the skillet!.
pour in a can of cream of mushroom soup and stir until it's smooth on low heat!. add in a half can of water!.
put the steaks back in the skillet with the gravy and let it simmer for 10 minutes with a lid on!.
add in some sliced onions and let it simmer for another 5 minutes!.

Chicken Alla Cacciatora - amazing!!
Serves four
Cut 4 chicken breasts into bite sized pieces!.
Fry some pancetta cubes in a pan with garlic oil, add chicken and spring onions!. Wait until chicken is nearly cooked,
Add a tsp of celery salt, 1 and a half cans of chopped toms and a splash of marsala or red wine!. Add half a tsp sugar and 2 bay leaves - any other herbs you want (I like rosemary and thyme and a bit of cayenne pepper)
Stir and cook for 20 mins
Add 2 cans of drained and washed cannellini beans - stir and heat beans through!.
