Yes, the boxed scalloped potatoes will work!. Personally if i use any out of the box I prefer the au gratin to the scalloped, they seem to have more flavor and a better taste, I use the betty crocker brand!.
If I have the time, of course nothing is as good as homemade!. I have tried many homemade recipes but this one recipe is sooo good and simple, i'll share :)

Scalloped Potatoes
5 or 6 med potatoes, thinly sliced
1/4 cp chopped onion (I use 1/2 cp)
1/4 cp butter
3 tbsp flour
1 tsp salt
1/4 tsp black pepper (I use 1/2tsp)
21/2 cp milk
cheese slices

White Sauce: (which I usually double the amount for the sauce)
Melt butter in pan; while butter is melting, mix flour, salt and pepper in a small bowl, add to melted butter, stir, add milk, stir gradually and let thicken!.
Grease a casserole dish, place one layer of potatoes in dish sprinkle onion over potatoes as desired, cover lightly with sauce mix!. Repeat till dish is filled!. Cook covered 1hr at 350, uncover, reduce heat a little, cook 30min, then add cheese slices on top till melted!.!.!.!.!.!.!.!.!.!.!.
Good Eating!! :)Www@FoodAQ@Com

boxed potatoes of any kind are terrible !.!.!. It's very easy, fast and cheap to make scalloped potatoes from scratch:

SCALLOPED POTATOES
6 medium potatoes (peeled & sliced)
6 TB!. butter
6 TB!. flour pepper to taste
1 tsp!. salt
3 c!. milk
grated cheddar cheese
Melt butter; add floour, salt & pepper!. Stir to a smooth paste!. Add milk, stirring constantly until thick (white sauce)!. Alternate sauce and layers of potatoes in greased casserole dish!. Sprinkle cheese on top!. Cover and bake at 350 for about 1-1/2 hrs!.!.!.!. Serves 6-8Www@FoodAQ@Com

One of my favorite "easy and quick" dinners in porkchops and scalloped potatos!. And, yes, I use the boxed ones, usually the "au gratin" type!. I add a couple of things to enhance the flavor:

1!. Sprinkle potatos with parmesan before baking
2!. Sprinkle potatos with crumbled bacon and chives

My favorite:

Season chops with seasoned salt and fresh ground pepper!. Brown in skillet with hot oil and remove!. Saute 1 yellow onion, peeled and sliced into rings, until translucent and golden!. Place chops on top of potatos that aren't cooked yet!. Top each chop with some of the onion!. Cover and bake for 45 minutes!. YUMMYWww@FoodAQ@Com

Try this:

Potatoes
1 large can mushroom soup
1 green pepper, chopped
1 Large onion, chopped
Green onion (optional)
Garlic Powder
Seasoning Salt
Black Pepper
Parmesan Cheese
Cheddar and Mozza Cheese

Combine it all in a well-greased roaster and bake!
You can play around with it however you like, but these are delicious!Www@FoodAQ@Com
