Stir-fry can be very versatile!. In fact, it's one of my favorite ways to cook squash, egg plant, and a few other vegetables together!.
Try this:
1 small egg plant (diced)
1 onion (chopped)
1 yellow squash (sliced)
1 zucchini (sliced
sliced mushrooms (preferably fresh, but from a jar will work)
1 bell pepper (diced)
1 stalk celery(sliced)
Roma tomatoes (diced)
In a large skillet, melt and heat butter!. Add your vegetables!. Then add:
Salt and pepper to taste
garlic
tarragon
oregano
maybe chives and rosemary
Stir until the vegetables get just a hint of transparency!. Then you can either serve as a side dish or over pasta!.
If you want meat with your stir-fry, try cutting a skinless chicken breast into strips and sauteing that with your vegetables!.
Enjoy and good luck!Www@FoodAQ@Com

I always marinate my meat with soy sauce, garlic and montreal seasoning!. I know this sounds kinda weird but sometimes i add mayo to the marinade!. Then wait a couple hours its better at 24 hours chop it up, fry it!. Then mix in some brocoli and a little butter!. Cook it until the brocoli is done and serve over white rice with a little more soy sauce!. ITS YUMMY!!Www@FoodAQ@Com
