My uncle makes them all the time and even though I choose not to eat quail, they tricked me one time and I ate it!. The seasoning wasn't bad tasting it was just the bird itself that tasted gamey and I knew that it wasn't chicken!. Anyways, he marinated it in lemon juice and pepper and seasoned salt, then he grilled them!.Www@FoodAQ@Com
When preparing quail, dove, other game birds, or wild game in general you can soak them in milk to take the gaminess out of them!. Soak them until they turn kind of pinkish!. You can also use beer but milk works better on the gaminess!. You can use BBQ sauce to baste them while cooking if you want to but that takes away from the flavor of the bird!. I cook them over in direct heat and very slowly to retain the moisture!.Www@FoodAQ@Com
Just some ideas for ya
