Question: I have put excess salt in idli batter, what to do!?
the idlis have become soft and spongy but there is excess salt in it which is spoiling the taste, how to normalise the excess salt in the batter!.Www@FoodAQ@Com


Answers:
All the previous suggestions including the one "make sambar to go with less salt" (which made me smile), should work!.

HOWEVER!.

If you DON"T want to bother with making another batch of batter to add to your existing "salty" batter!.!.!.then you could turn this into RAVA IDLI or SEMIA IDLI!. When you add the Rava or Semia -- DON"T add any more salt -- the rava or semia will balance the excess salt already in!.

For Rava Idli, just add two TBs oil to a wok on pan, add Mustard seeds, when popped add Cashews, chopped chillies, stir till nuts darken a bit!. Now add a cup or two of Farina (depending on how much "salty" batter you already have) to the seasoned oil in the pan and toast till golden!. Dump this into the batter, mix well!.!.!. in about couple of hours you should be able to make Rava Idlis!.

For Semia idlis, do the same as above, substituting Semia for the Rava ( Semia is Indian Vermicelli, there's an MTR brand available in packets in Indian stores)!.

Make fresh coconut chutney on the sweeter side by adding less salt and you'll have a nice side to dip into!.

Even if you make a less saltier Sambhar or Chutney, the extra salt in the idli would still be noticed!.

What I suggest is you add some very finely chopped or maybe grated vegetables to the batter!. Veggies like carrots and beans would make a nice healthy idli!. To the batter you could also add some lightly fried cashewnuts, raisins, green chillies and mustard seeds!. All these ingredients while improving the nutrition value of the idli will help cut down the salt in the idli itself by absorbing it!.

Here are a few ways you can repair the damage!.

1!. Add rice rava or lightly roasted rava(semolina)!. The quantity of rava will depend on how much salty is your batter!.
Add a pinch of soda bicarb and make idli as usual!.

2!. You can also add some rava, chopped onions, fresh grated coconut to the batter and make appam or uttappa with that!.

3!. You can add rice flour and water as needed and make dosa with that batter!.

4!. Make idli with your over salted batter as usual!. Let them cool!. Break up the idlis in small pieces!. Make upma using onions, tomatoes, green chillies, fresh grated coconut and these idli pieces!. Do not add salt to this upma at all!.

There's really no way to remove salt from a recipe once it's been added!. The best course of action would be to make a duplicate recipe, but with no salt in it, and combine the two!.Www@FoodAQ@Com
