Makes 4 dozen

INGREDIENTS:
1 cup raisins
1/2 cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
1/2 cup chopped walnuts
2 eggs
3/4 cup vegetable oil
1 teaspoon vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C)!. Soak raisins in hot water and set aside!. In large bowl, sift flour with soda, salt and spices!. Blend in rolled oats, sugar and nuts!. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture!. Pour into dry ingredients, stirring until well mixed!. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets!. Bake 10 to 13 minutes in the preheated oven, until the edges are golden!.Www@FoodAQ@Com

I have 3 eggless cookies in the link below and one of them is with oatmeal!. Hope it helps you!.

1 1/4 cup oats
1/2 cup vegetable oil + 1 tbsp oil
1/2 cup all-purpose flour
1 cup powdered sugar/brown sugar
1 1/2 tbsps unsweetened cocoa pwd (adjust according to your taste)
3/4 tsp baking pwd
big pinch of baking soda
1 tsp vanilla essence

1 Sieve flour, baking pwd, baking soda and cocoa pwd!.
2 Blend the sugar and oil till smooth!. Add the sieved ingredients to the sugar-oil mixture!. Add vanilla essence and oats and mix well to form a soft dough!. If the dough doesn’t become stiff enough to roll out into balls, add a few tbsps of milk and chill for a few minutes!. Be careful when shaping out the dough into small balls, as it does take effort to hold it together to form small balls and slightly flatten them!.
3 Place on a greased tray and bake at 180 C for about 10-12 mts or till done!.

OATMEAL COOKIES

2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1 1/3 cups butter
1 1/4 cups granulated sugar
3/4 cup brown sugar (firmly packed)
2 large eggs
1 teaspoon vanilla extract
3 tablespoons rum
3/4 cup raisins
3/4 cup Craisins
1 cup nuts
2 1/2 cups uncooked oats (regular)

Preheat oven to 350°F!.
Soak the raisins and Craisins in the rum!.

In a large bowl, combine flour, salt, baking powder, soda, and cinnamon!. Set aside!.

In the bowl of an electric mixer, cream together the butter and the sugars!. Add eggs one at a time, beating after each addition!.

Add the vanilla and rum in which the raisins have soaked; beat until well blended!. Add the nuts, and oatmeal to the dry ingredients and stir into the liquid mixture!. Stir in the raisins and Craisins!.

Mix for about 3 minutes!.

Drop by large spoonfuls onto ungreased cookie sheets!. Bake in a 350°F oven for 10 to 14 minutes or until light brown, being careful not to overbake!.

Makes 4-5 dozen cookies, depending upon size of cookies made!.

1 1/3 cups butter
2/3 cups lard
2 cups brown sugar
1 cup white sugar
4 eggs
4 tbsp!. water
3 cups oatmeal
4 cups flour
2 tsp!. baking powder
2 tsp!. baking soda
1 tsp!. salt
2 cups chocolate chips

Preheat oven at 350°F!.
Mix together in large bowl!. Lightly greese cookie sheets!. Drop by spoon full onto cookie sheets!.

Bake for 8-10 minutes or until lightly brown!.

1 cup butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda

3 cups oatmeal
1 cup raisins
1 cup flaked coconut
1 cup chopped walnuts

Preheat oven to 350 deg!.
Beat together butter and sugars until creamy!. Add eggs and vanilla!. Beat well!.

Add combined flour, baking soda, cinnamon and salt!. Mix well!. Stir in oats, raisins, coconut and nuts!. Drop by rounded tablespoonfuls onto ungreased cookie sheet!.

Bake 10 to 12 minutes or until golden brown!.

Oatmeal Cookies (modified, a bit, from _Eating_Well_ mag)

1 Cup packed brown sugar
1/4 Cup unsweetened applesauce
1/4 Cup egg equivalent (ie comercial replacer, two whites,
1/4 cup "egg beaters")
1 Tbsp vanilla extract
1 Cup raisins
2 Cups rolled oats, toasted
1 Cup cake flour (all-purpose is okay but not as tender)
1/2 Cup whole wheat flour
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp salt

oven: 350 F
line 2 baking sheets with parchment or coat with non-stick spray

Toasting oats: Heat a large skillet over medium-high flame and
add half the oats!. Toast, stiring frequently until the oats begin
to color and become fragrant (15 minutes or so)!. Repeat with
remaining oats!.

In a large bowl, whisk together sugar, applesauce, egg replacer,
and vanilla!. Stir in raisins!. In a medium bowl, stir together
remaining (dry) ingredients!. Add the dry ingredients to the wet
and mix just until blended!.

Drop the dough by tablespoonfuls onto prepared baking sheets, spacing
cookies about 4 cm apart!. Bake for 15 minutes, or until lightly
browned!. Transfer cookies to a wire rack to cool!. Makes 3 dozen
cookies!.

Storage: no-fat-added cookies do not store well!. They become stale
quickly and stick together if stacked!. As soon as they are cool, wrap
the cookies, layers separated by waxed paper, and freeze!. To serve,
simply let them thaw to room temperature!.

Notes: Because there is no fat to help them spread, the cookies will
be kind of lumpy!. Do toast the oats, it ads depth to the flavor!.

Oatmeal Cookies

Blend in blender until creamy: (preheat oven 350)

1!.5 bananas
1/2 c!. applesauce
2tsp vanilla
1/2 c!. brown sugar (or honey or brown rice syrup)


Sift together:
1 scant cup of Whole wheat flour
1!.5 tsp baking powder
dash salt
1 tsp cinnamon
dash nutmeg
1-2 tbsp sesame seeds (optional)

mix dry and wet!. Stir in 3/4 c!. oatmeal (the regular cereal type)
stir in 2 tbsp raisins (optional but delicious)

drop by generous spoonfuls onto cooking-sprayed cookie sheet!.

Bake at 350 for 20-30 min or until just browning!. (without the oil they
take longer to bake than you think!!.!.!. check them though after 15 min to
see how they are doing)

TA DA!!! This recipe has worked very nicely for me twice!.

Title: Fat Free Oatmeal Raisin Cookies

Mixture No!. 1 (sift together)

3/4 c + 2Tbls!. WW!. Pastry Flour
1/2 ts Baking soda
1/2 ts Salt (optional)
1/2 ts Cinnamon
1/4 ts Nutmeg

Mixture No!. 2

1/4 c WONDERSLIM (Or prune puree)
2 tb Light Corn Syrup
2 tb Vanilla
3/4 c Brown Sugar (well packed)
1/4 c White Sugar

PLUS 1 1/4 cups rolled oats, quick OR old fashioned, TOASTED in oven until
they barely start to turn golden!.

A) Preheat oven to 350 degrees!.
B) Soak 1 cup raisins in water for 10 minutes!.
C) Toast 1 1/4 cup uncooked Oats (quick or old fashion), set aside!.
D) Remove raisins from water, drain and set aside!.
E) Spray two cookie sheets with a thin film of vegetable oil!.
F) Beat at high speed, Mixture No!.2 into Mixture No!. 1!. Fold in toasted
Oats, then add raisins!.
Drop by spoonful onto cookie sheets!. Bake for approximately 9 minutes at
350 degrees!.

Fat-Free Oatmeal Cookies

1 cup all-purpose flour
1 cup quick-cooking oats
1/2 c sugar
1/2 tsp baking powder
1/2 tsp baking soda

2 large egg whites
1/3 cup ml) corn syrup
1 tsp ml) vanilla
3/4 cup raisins
no-stick cooking spray (or whatever you choose to grease the pan)


In large bowl, combine flour, oats, sugar, baking powder, baking soda,
salt, and cinnamon!. Add remaining ingredients, stirring until all
ingredients are moistened!. Dough will be thick!.
Drop dough by heaping teaspoonfuls onto baking sheet sprayed with
cooking spray (or whatever)!. Bake at 350F (180C) for eight to ten
minutes or just until set!. Do not overbake (or they'll turn into
hockey pucks)!. Cool five minutes on baking sheet (at which point
they'll set up nicely), then remove to wire rack to cool!.
Makes about 2 1/2 dozen cookies (depending on the size you like)!.

Oatmeal cookies (vegan) (T)

1 C mashed bananas
2 C sucanat, washed raw sugar or other sweetener
2 T blackstrap molasses
1 T EnerG egg replacer (+ !.25 C water)
1 t vanilla
!.5 t salt
1 t baking soda
2 C whole wheat flour
2!.5 C oats, rolled or steel-cut
2 to 3 C raisins

Blend bananas, sweetener and molasses!. Mix egg replacer with water
until thickened and add!. At medium speed in blender or processor, add
separately: vanilla, salt, baking soda, flour and oats!. Stir in all
other ingredients!. Press golfball size scoops onto a non-stick baking
pan about 2" (5 cm) apart!. Bake at 400 F!. (200 C!., Gasmark=6) for
8-10 minutes or until browning starts!.

Dried cranberries or other diced dried fruit can be mixed with or
replace raisins!.

About 24 cookies, each: 155 calories, 7 percent from fat (1!.2g),
80 percent from carbohydrate (31 g), 13 percent from protein (5 g)

if necessary)!. Bake for 12-15 minutes!.

Bake!. The cookies are very sweet, but healthier than

Oatmeal (Whatever) Cookies

1/2 C!. Lighter Bake 1 C!. wheat flour
3/4 C!. sugar 1 t!. baking soda
3/4 C!. brown sugar 1 t!. salt
1/2 C!. egg substitute 2 C!. oatmeal
1 t!. vanilla

raisins, or dried blueberries, or Craisins, or dates,
