Cleaning the catch:

With a short bladed knife make a shallow incision starting from the anus to the jaw!. Next, slit gills on both sides!. Hold fish firmly in one hand with its underside facing you!. Using your other hand, place index finger inside mouth with thumb pressed on outside and pull back!. Fish’s entrails will follow, discard!. Place fish on its side and chop head in one clean motion, then tail and dispose!. Gently unfold trout and cut open membrane that covers the spinal blood line!. Set under sink faucet and allow the water pressure to wash it away!. Rinse the whole fish and gently pat dry!.

Ingredients:

5 medium trout
1/2 stick of butter softened
3/4 cup all-purpose-flour
Salt to taste
5 tbs!. olive oil

Butter outside of trout and coat lightly with flour!. Pour oil and fish in a saucepan on medium heat!. Sprinkle salt and cover; cook each side for 5-7 min!. When cooked through make an incision along its back and gently pull out skeleton!. Serve immediately!.

Baked Trout with Garlic & Mushrooms Recipe

5 (3/4 lb) trout
1/2 cup olive oil
5 cloves garlic, chopped
fresh ground black pepper salt
1/2-3/4 lb fresh mushrooms
1/4-1/2 cup butter
4 tablespoons fine dry breadcrumbs
4 green onions, sliced
3 fresh lemons (or lemon concentrate)
2 tablespoons minced parsley

To cook trout, wash and dry the fish inside and out and coat sides with a little olive oil!.
Slice mushrooms and place half in the bottom of a shallow baking dish!.
Salt and pepper fish, inside and out, to taste and place in dish on top of mushrooms!.
Sprinkle bread crumbs over fish along with the minced parsley, chopped garlic and the green onion!.
If using fresh lemons, squeeze 1 or 2 directly over the entire trout including the inside!.
Meanwhile melt butter, add to olive oil and the juice of 2 lemons!.
Pour slowly over fish saving about half of the mixture!.
Bake for 20-25 minutes at 375 degrees or until they are tender and bread crumbs are light brown!.
Fish is done when the meat flakes easily when a fork is inserted into the flesh and lifted up slightly!.
Just before the fish are done, saute 1-2 minutes , the remaining mushrooms in the sauce that is left and pour over top after placing trout on a serving plate!.
Garnish with a few lemon wedges and a few sprigs of fresh parsley!.
Serve this Italian Trout recipe with rice, or Italian pasta, and a vegetable!.Www@FoodAQ@Com

yum! try baking them wrapped up in aluminium foil - stuff tri colour peppers, spring onion, lemon slices, and season wif salt & pepper - brush inside wif a mix of soft brown sugar and olive oil and a lil drop of balsamic - before covering squeeze lemon juice all over - cover and bake for about 15 mins until steaming - alternatively you could chuck da whole lot on a barbie - best though is smoked trout - wahoooooooooooo!

Stuff them with herbs (rosemary, parsley, dill), a little minced garlic and lemon slices!. Season with salt and pepper!. Sprinkle with a little olive oil or white wine and roast in the oven at 350 until done-depending on the size of the fish about 15 minutes!.

First douse them in butter then cover them on flower and fry them over an open pan!. Once the heads are chopped off, and they're cleaned thenopen the fish after it's cooked and u can take out the entire rib cage, the skin and tail are the best parts ebjoy!.Www@FoodAQ@Com
