2 green onions
1/4 lb lean ground beef
1/4 cup finely chopped celery
1 tablespoon finely chopped fresh parsley
1/4 teaspoon salt
1 dash pepper
12-18 wonton skins
6 cups chicken broth
1/2 cup spinach or bok choy, leaves halved lengthwise,shredded
1/4 cup shredded carrots
Directions:
Reserve one green onion top for garnish; chop remaining green onions!.
Combine chopped onion, ground beef, celery, parsley, salt and pepper in a small bowl; mix lightly!.
Place approximately 1 1/2 tablespoonsful of ground beef mixture in center of each wonton square!.
Lightly dampen edges of square with water!.
Bring together corners; pinch to seal!.
Set aside!.
Bring broth to boil in large saucepan; reduce heat to medium!.
Add 1/2 of wontons; simmer 4 minutes!.
Remove cooked wontons with slotted spoon; keep warm!.
Repeat with remaining wontons!.
Cut reserved green onion top into thin diagonal slices!.
Add to hot broth with spinach and carrot!.
Place wonton in soup bowls!.

1 tablespoon Chinese rice wine
1 tablespoon light soy sauce
1 teaspoon finely chopped green onion
1 teaspoon chopped fresh ginger root
24 (3!.5 inch square) wonton wrappers
3 cups chicken stock
1/8 cup finely chopped green onion
DIRECTIONS
In a large bowl, combine pork, shrimp, sugar, wine, soy sauce, 1 teaspoon chopped green onion and ginger!. Blend well, and let stand for 25 to 30 minutes!.
Place about one teaspoon of the filling at the center of each wonton skin!. Moisten all 4 edges of wonton wrapper with water, then pull the top corner down to the bottom, folding the wrapper over the filling to make a triangle!. Press edges firmly to make a seal!. Bring left and right corners together above the filling!. Overlap the tips of these corners, moisten with water and press together!. Continue until all wrappers are used!.

* a few drops sesame oil (optional)
PREPARATION:
Combine all the filling ingredients in a bowl, mixing well!. Lay one won ton skin in front of you!. Cover the remaining won ton skins with a damp towel to keep them from drying out!.
Filling the won tons: Moisten all the edges of the won ton wrapper with water!. Place a heaping teaspoon of won ton filling in the center!.
Fold the won ton wrapper in half lengthwise, making sure the ends meet!. Press down firmly on the ends to seal!. Use thumbs to push down on the edges of the filling to center it!. 2 cups sliced spinach
1 (14!.5-ounce) can diced tomatoes, drained
Preparation
To prepare won tons, place first 5 ingredients in a food processor!. Process until well-combined, scraping the sides of bowl once!. Simply buy frozen wontons!. Heat chicken or beef broth to a boil!. Throw them in!. Throw in baby bok choy leaves, chopped green onion, left over sliced meats, thin sliced carrots, tofu, anything that sounds good!. Rice noodles,Soy sauce to taste!.
